    Nice looking meal.. BTW I used your making rice recipe you did long ago, I found it by accident, and is the first I made rice that did not stick and get crappy for lack of a better word. I also made Quinoa but instead of 3 minutes on manual, I used one minute, and tsp of salt per cup, came out great. Learning cooking times and ratios seems to be the crux of using the Instant Pot.

    Hi Jeff, Made this recipe the other night and it was an instant hit! The only thing we didn't like was the greasiness...first off, I think it's not necessary to cook the bacon (I used bacon) or Pancetta in oil. Just cook it naturally, and then scoop it out. The onions can cook in the bacon fat. I think the bacon grease would also work to separate the spaghetti noodles when they are cooked. I just used chicken broth vs. the Better than Bouillon Garlic because we can't get that easily in Canada. "Maybe" I would add a little bit of butter to the noodles, but definitely not half a stick. Other than that...it was delish!!! We left off the extra cheese at the end and it was still cheesy enough for us.

    Jeffery I love all your recipes. This one is comfort food for my hubby. I love this recipe so much ❤ but I do add a extra step at the end. I add 1.5 cups of frozen peas.     hi jeffrey,my son got me an instant pot duo nova,i dont see it on your list ,its an upgrade on the lid ,the pressure seal/release valve is totally changed,i dont have to worry about sealing for pressure,as soon as i lock the lid it does it on its on,i love it i push down on a button thats not even where the steam comes out,so you dont get burned,as for this recipe,i cant wait to make it,thanks for sharing 🥰😘

    This is so good! My grandsons had two helpings, my daughter could not shove it in fast enough. This was a cheat meal for me. I am suppose to watch my salt/cholesterol intake. Switched eggs to egg beaters, reduced cheese to just 1/4 cup. Added no additional salt. Used a butter substitute. Small change but every bit helps.

    OK made this tonight, my special diet prevents me from eating it, but my GF loves it. It's seems to be her new favorite instant pot recipe. Surprisingly, I think it needed one or two more minutes pressure-cooking the spaghetti - it was very al-dente. But we've found when reheated the pasta will be fine.

    Looks interesting! When my Italian grandmother made this, she would beat 4 eggs, 2c of heavy cream, 1.5c grated Parmesan, cooked pancetta, ham, bacon or chicken, handful of peas, plenty of black pepper together in a large heated bowl. She cooked the pasta and added it immediately to the bowl, fishing it out of the pot instead of draining it so some hot water still clings to the pasta. This "cooks" the egg without actually having egg "clumps". Then you could add more parmesan on top of your plate if desired. As aways, I'm still going to give yours a try too! You haven't disappointed us yet! Bravo Jeffrey 👍🍴♥️🍴👍

    @@mrfivebyfive87 Yup, and surprisingly good. Grandma cut chicken breasts in small cubes then fried them. Then added them in. I guess she did this when she didn't have any of the other meats.

    Hello Jeff. I'm a Sheigetz from New Jersey, at least I grew up there. Great recipe except for a couple of items. Never, ever break pasta in half. I know it had to fit but that's a no, no. Adding 1/2 and 1/2. Yeeuk! Never heard of that either. Where's the pepper and parlsey? Aside from that, great recipes. I made your sausage and shells yesterday, that was great.     Great idea to make this in the instant pot, clever way to do it. But I think you shouldn't have turned the heat on after adding the eggs. This way you just scrambled them, that's why they look so curdled at the end.

    I adore carbonara and think this one is going to be a hit!!! However, it is decadence personified--all that butter, cream, and parmesan. Have you tried making it reducing the amount of oil and butter? No way am I giving up the cheese! I am going to try this...the question will be how decadently I make it! Thanks for your hard work!

    I have found that carbonera is even better with peas in it and a quick squeeze of lemon. The sweet green and lemon flavor really brighten the dish and make the flavors pop.

    Yeah me too. I am Italian. But it's not the first time I saw him do it so I just sigh and let it pass. And you really don't save much, if any, time doing it in a pressure cooker. The only thing it's good for is for long-term cooking like for cheap meat stews or studio apartments or dorms with no stoves/ovens. I would have loved one in my dorm but the only things we had were electric kettles or the occasional illicit hot-plates on which you could barely crisp bacon (they were forbidden in dorms due to fire hazard).

    It looks great but where is the pepper? Carbonara got it's name from the many, many specks of pepper that look like coal and was a dish for the miners.

    Sonia Turcu Carbonari are not coal miners but rather makers of [wood] charcoal (colliers in archaic English). If we agree that carbonara(the dish) began to appear in industrialized Italy (see below), we also have to take into account that the word carbonaro/a also had a different and more prevalent meaning for Italians at that time. The carbonariwere members of a Neapolitan secret revolutionary society (similar to the Free Masons) called the Carboneria. The nineteenth-century group took their name from a fifteenth-century Scottish group of rebels who masked their subversive activities by pretending to be colliers. In early twentieth-century Italian, alla carbonara meant (by association) in a secretive or subversive fashion. And while there is no doubt that alla carbonara can also be interpreted as relating to coal (also called carbone in Italian), it’s implausible that the dish is related to coal or coal miners. It’s more likely that it’s related to charcoal or embers.

    Margo I wonder if you could use spaghetti squash and mix the rest of mixture together and use slow cooker button on instant pot. Or possibly could make zucchini lasagna noodles instead and cook the same.

    Debbie Coleby They actually tried it many years ago, but it didn’t work!! Trying to do several different smells during one movie, it just made people sick to their stomachs, because once you spray a scent into a theater... the smell lingers in the room longer than what’s on the screen. (Imagine smelling fishy smells while looking at the ocean during a storm, and then a few minutes later several different foods cooking, combined with fields of flowers a little later, and then scenes of garbage ... ugh!!!!! 😳😱🤢🤮🤮🤮🤮🤮🤮🤮🤮🤮🤮🤮 I think it was Mike Todd(?), producer who died while married to Elizabeth Taylor, (her ONLY husband that she NEVER divorced!) put money into developing “smell-o-vision”, and it was a HUGE resounding FAILURE!!!!! ☹️

    I am all over this! I can’t find pancetta ...only deli boars head sliced kind of thing . Any suggestions?

    Ask the deli counter people? I found it in my local "Randall's" (Safeway). Our HEBs also have it.

    I ask the deli counter to cut a thick piece and then dice it at home.
