Instant Pot Recipe | Venison Shank Osso Buco

Share in one of my favorite venison recipes - venison shank osso buco. I prepare this dish using my Instant Pot, along with a cast iron skillet for the best sear. See the recipe below, and feel free to reach out with any questions!
Osso buco is traditionally a dish of cross-cut veal shanks braised with vegetables, white wine and broth. I will show you how to prepare this Instant Pot recipe with venison shanks to put this oft-forgotten cut of meat to great use.

▬▬▬▬▬▬▬ Venison Shank Osso Buco Recipe ▬▬▬▬▬▬▬▬▬
1 tablespoon olive oil
4 venison shanks, cut across the bone into 2-3 pieces each, about 3 pounds
Kosher salt and fresh ground black pepper to taste
1 large onion, diced
1 stalk celery, diced
1 carrot, diced
4 cloves garlic, crushed
2 tablespoons tomato paste
3 sprigs rosemary, chopped
1/4 parsley, chopped
1 cup chicken broth
1/2 cup dry white wine
15 oz can diced tomatoes, undrained
Gremolata
2 cloves garlic, minced
zest of 1 lemon
1/2 cup parsley leaves
Sear the shanks in a cast iron skillet until browned on all sides - remove and set aside
Saute onion, celery, and carrot with olive oil until translucent. Add rosemary, parsley, and garlic for the last minute.
Transfer meat and vegetables to the Instant Pot. Deglaze the skillet with white wine, scraping to loosen any browned bits, and transfer over the meat and vegetables. Add tomato paste and stir all together. Add chicken stock, then pour the full can of diced tomatoes over the top of the mixture.
Set your Instant Pot to cook at high pressure for 50 minutes.
Prepare the gremolata by mincing garlic, lemon zest, and parsley together to form a loose mixture.
Once the cooking is complete, release pressure from the Instant Pot and serve the meat with a bit of the sauce from the pot and sprinkle with gremolata. I love to serve this dish with sweet potatoes, though it is traditionally served with polenta.

    Just finished having this for supper. I’ve never used shanks for anything except burger before, and holy crap I think it’s my favourite part of the deer now!

    Been looking for a good recipe for Axis deer shanks. Giving this a try. Got this in my insta pot now. I sub'd in some red wine and some worcestershire sauce. Thanks for sharing.

    nice job. I have mine in the instant pot right now. I did almost everything you did prior to watching so were thinking alike. I do have a manual bone saw, and it it a pain to cut discs, band saw would be nice. Also cast iron for searing is key as that sautés setting I find is only good for veggies. I set mine for two hours, but after watching I will check after 50 mins. I find with neck roasts and good ole tough cuts of game I need over an hour. thanks for sharing. good luck

    Thanks for watching! Yes, a bandsaw would make a much easier process. I have a dedicated meat/bone blade for my reciprocating saw but it can get a bit unruly. I hope yours turned out well! Cheers!

    Solid. I haven’t tried yet and have a question about the bone possibly getting in the meat when sawing. Is it a thing? Or its all good with a rinse maybe? Or its super obvious? Also is it best to cut the meat/bone when frozen? That makes sense to me, but I don’t know for sure. Thanks man. Can’t wait to try. Tonight though the backstraps are thawed 👍

    Can't go wrong with backstraps! Cutting the shanks while frozen or slightly-thawed is the best option. I use these blades for my reciprocating saw which are food grade: amzn.to/3oMarXc You will get a bit of bone "dust" that's easily wiped off before cooking. I try to avoid washing the meat and keep it as dry as possible. I have had some success cutting through shanks when they're fully thawed - you just have to use a (clean) finer blade saw or hacksaw, and take your time. If using something with power, there is the chance of shattering the bone, and that is much harder to sort out. I had this happen recently, and I had trouble removing all the bone shards.
