Inside one of Japan's BIGGEST Knife Factories: TOJIRO & TOJIRO ATELIER

In April 2022, we visited the TOJIRO knife factory in Tsubame, Japan! We got to go behind the scenes and see how TOJIRO knives are made, and despite their reputation as factory-made knives, we found much of the work was done by hand! TOJIRO employs a huge team of expert craftspeople and even has a separate space called TOJIRO ATELIER, where blacksmith Tomo Matsumura-san forges knives by hand, the traditional way. In this video, we see how TOJIRO DP, TOJIRO ATELIER, and other lines are made.

    Love my Tojiro 240 mm kiritsuke in white #2 steel. Gets stupid sharp after 1 minute on the stones.

    I just tried a Tojiro 180mm gyuto. I got it for my mom for christmas. 1st knifewear purchase! I finally found a youtube channel i can but awesome merch from! But ya that Tojiro felt pretty good on the bell pepper.

    I own one Tojiro and it is my favorite knife in the whole block. It is well made in every respect and its SG2 steel is extra sharp and holds its edge longer than my other knives. Appreciate your video and being able to learn more about the Tojiro company and factory...thanks!

    @@dimmacommunication The Tojiro I own is their 150mm Petty Knife made of their high speed powdered steel. Their model number is F-525.

    SG2 is my favorite core stainless currently offered in Japanese knives. it can go 2 years between sharpenings with proper care. My miyabi mizu 8" chef knife has a 2 year old edge and recently beat my mom's electric slicer. I had to give up on the prime rib and get my knife out of the car. I just got my mom a Tojiro DP 180mm gyuto. The VG10 one for 90 bucks. The thing is crazy sharp!

    My best knife is a "production" made Miyabi 240 SG2 Gyuto.. I think it was cheap at $200;.. might not be a hand hammered 200 layer monster, but I love the thing

    My 1st knife was a Tojiro F-332 Do they use natural stones to sharpen SG-2 steel too ?

    Hey, generally natural stones are used for high carbon steel rather than stainless steel. At Tojiro they finish with synthetic stones.

    I'm kinda bummed that the Atelier blades don't offer wa handles (or no handle) or steel other than VG10. Tojiro themselves do offer shirogami (though not which one[s]) and the generic "powdered high speed steel". Their website doesn't provide any more detail, either. :: sad panda face ::

    I feel that, that would be cool! The Atelier factory is still new in the big picture, and they have lots of up and coming young artisans, so hopefully the line will grow in future!

    @@KnifewearKnives I think that's one of the great things about smaller forges. The ability to try new things (to them) and still deliver their current line ..and do so much quicker than a large company.. is just such an opportunity!
