Inji Curry | ഇഞ്ചി കറി | Onam Special | Puli Inji | Onam Sadhya Recipes | പുളി ഇഞ്ചി | Ginger Curry
Inji Curry or Puli Inji is a Kerala Sadhya special, particularly made and served on the auspicious occasion of Onam. The combination of chili powder, jaggery, ginger, and tamarind makes it hot, tangy, and slightly sweet pickle like consistency that complements all the other dishes for the sadhya. You can serve this dish with idli or dosa also.
Inji Curry / ഇഞ്ചി കറി
Ingredients:-
1) GINGER - 250 G
(CHOPPED FINELY, AFTER THAT
RUBBED & WASHED THOROUGHLY)
2) TAMARIND - 60 G
(SOAK IN HOT WATER)
3) JAGGERY- 75 G SOLID (MELTED TO SYRUP FORM)
4) MUSTARD - 1 TEASPOON
5) RED CHILLI POWDER - 3 TEASPOONS
(1 TSP KASHMIRI + 2 TSP NORMAL)
6) TURMERIC POWDER - 1/4 TEASPOON
7) CURRY LEAVES- 2 STALKS
8) GREEN CHILLI - 3 (CHOPPED FINE)
9) RED CHILLIES - 3 NO.S
10) ASAFOETIDA - 1/4 TEASPOON
11) FENUGREEK - 1/4 TEASPOON
12) SALT - TO TASTE
13) COCONUT OIL - 5-7 TABLESPOONS

    Ma'am your videos are awesome.. too good presentations.. i have some doubts in this recipe.. why you washing the chopped ginger? the values of ginger will get lost in the water right? and why pressure cooking it too? ginger is having lots of values which will be lost in these two techniques.. except these two things the recipe is great..

    Hi thank you! This is how we have been taught at home traditionally...wash ginger thoroughly so that the sticky substance/white residue(karam)that might irritate your gut gets removed to an extend. ..And also if we fry without washing I have noticed that it tends to get sticky. I agree pressure cooking is not the best way for any cooking.. But today's lifestyle we can't expect everyone to do slow cooking. Traditionally my mother used to cook ginger for whole day in earthen pot. I have explained all these in the video too do's and don't s too. . Hope this explains..Happy cooking.!

    @@PadminiKitchen Thank you somuch for your time and explanation.. but still not convinced about washing the chopped ginger as u said it can cause gut irritation.. actually its a medicine for gut related problems.. no worries every one has there on style of cooking.. any way im enjoying the way you are presenting each dish..

    Hi Rob.. Thank you. My understanding about this comes from what I have learnt from my father since he was a ayurvedic vaidyar. What I know from him is that we don't use ginger in pure raw form for consumption. Even when u make ginger juice etc. It is kept for some time to remove the white residue and only the top watery part is used. This is how we have done it for ages in our family.. I am not certified to break down or debate further on the exact reason..these are just my suggestions from learnings passed on to me hereditarily all in a the good intend! Hope this helps.     ​@@robscookworld2744 if the qty of ginger used is very little in proportion we don't normally do that. This is specially done when we are using ginger in large proportion eg: ginger curry! Happy cooking!😀

    @@PadminiKitchen UPDATE: I made this today successfully! Thanks so much to you. Generally in our hometown, we seldom use jaggery in inji curry, except for wedding sadya.
