    Kind of ridiculous in the case of Thyme especially since thyme often ends up as nasty threads if you don't chop it finely enough and even it you do it sticks to your teeth. Generally dried thyme imparts the flavor without the mess. Most sources say use at least 1/2 to 1/3 as much since the flavor is more concentrated in the dried herb. She's about as big a fraud as Ellen Degeneres.

    It wasn't like that. Ina didn't completely blow him off. She just said she doesn't use dried herbs and she had no idea how to use dried herbs and kept saying she only uses fresh herbs because they are superior in every way.     Dried herbs? Oh, I see. You think cooking with dried herbs is superior to using fresh ones. You go to your grocer and select, idk, some dried thyme, because you tell the world you’re too lazy to care about what you put in your food, but what you don’t realize is that that thyme isn’t just dried, or stale, but it’s actually a weed. You’re also blithely unaware of the fact that supermarkets tend to store their herbs in the back room for longer than necessary thereby taking the flavor out of them, nonetheless, you use dried herbs in your dish, and I think it’s comical that you made a choice that you feel makes you a gourmet chef, when in fact, you’re ruining your dish, all because you used some dried herbs.

    This was in the 2000s when everyone in popular cooking media was always on about fresh herbs for everything and anything. It was like culinary fortnite. Thankfully people are a lot more reasonable and don't expect everyone to be their own microagriculturalists.

    Fresh herbs are very nice and I use them when I can but they do go bad pretty quickly and unless you have your own herb garden they're not always convenient. It's nice to have dried herbs and spices on hand when making a recipe. Herbs like parsley and basil are far superior fresh but there are other herbs like oregano that are actually more fragrant and flavorful when dried.

    Mint gets more concentrated when dried. And some herbs are often in short supply fresh (tarragon), so dried is a lot more convenient.

    I totally believe that. I’d even go so far to say that the same concept applies to dried garlic too. I’m a big garlic lover and actually find that garlic powder/granulated garlic often gives things a more pronounced, noticeably garlic flavor than fresh. For garlic bread especially, forget about it, garlic powder wins every time.

    I absolutely adore Ina and agree with her most of the time but how you gonna do a segment all about herbs and basically be like, 'btw dried don't count'. Dried herbs can sometimes bring a unique quality that fresh do not. Also, accessing fresh herbs is not always practical for most people.

    u know fresh herbs are mostly free bc they grow from the ground or in a pot. you can definitely go to any community garden and find basic herbs like basil, thyme, rosemary etc and pick them for free or get a stem that you can root for free

    Some herbs are REALLY easy to grow at home, even in an apartment. Rosemary is very hardy and actually makes a nice houseplant in a sunny window. It grows fairly slowly but if you aren't using it all the time you should be alright even with a mid-sized pot. Basil grows like a weed in a sunny window. The only problem I have with mine is that it soaks up water like a sponge - I need to remember to water it every couple of days. No issues with root rot though, that's for sure. I have all the pesto and caprese salads I can handle!

    Seems as though Ina is out of touch with some her audience. Oh, wait - she probably doesn’t care about that either. I like Ina's presentations but no longer watch because on a practical level I cannot execute these presentations in my real life. Probably many others feel this way too.

    Coming from a person that is below poor half the time in fact I was homeless 2 years ago, I have everything I need now because I work my butt off but... Point being, I'm part of her audience, and that's exactly why I watch her show, because most of the dishes she makes or things I can only dream about... That maybe if I wanted to, I could save up or spend my salary on all the ingredients to make one of those dishes Some of them are actually quite practical though.. It's all about priorities... Even we poor folk spend money on luxury sometimes.. She is one of my absolute favorites because I like her entire vibe from start to finish And while I do believe in humility, coming from where I come from,... She's just doing her thing and staying in her Lane and I don't feel like every single person should have to be the same and just bow down and try to fit into what everyone wants All of those famous chefs are doing different things, and many of them have practical meals for the average citizen, and speak about things they can relate to And that's great like Rachael Ray and her 30 minute meals, For The other woman that used to be on food Network who did semi fresh meals She would use like half fresh half canned or quick items And I think all of that is fine... I'm a super humble person but There are certain things that people have judged me on simply because I had good taste, or certain types of preferences and priorities with what I did with my money And they actually thought that I was wealthy when I'm not at all by far.. I like watching her show because it's quite different from many of the others, while some might find it pretentious, I just don't get that upset about it I love watching her go shopping, I adore the part of the country that she lives in, the things that she makes ,and her attitude... She's just doing her thing being herself Sure she could have been quite a bit more humble about the way she said it But then again A lot of people are entertained by attitudes like that and half the time that is why public figures spout off things like that quite simply for entertainment purposes She probably wasn't even trying to be mean. I know of a lot of cases where people really are humble and kind in real life, but for entertainment purposes or so that people will actually watch they kind of put on airs, or go into a certain attitude, even playfully... when on camera, I've even done it in some of my own content We all admire people who are kind compassionate, thoughtful to others and humble of course But we also admire people who are fierce, strong, people who say what the hell they feel, and many of us are even entertained by people who are quite arrogant and pretentious sometimes I wouldn't get upset by that kind of thing, I would just take her advice and keep it in mind. I really doubt the majority of her viewers shop at the dollar store or anything I mean I do but...lol I think the majority of her audience can probably relate to her.... And are cool with it And if she changed, she would probably lose viewers.

    I'd probably use half considering the particles are closer together in powder but that's just me I like putting more fresh herbs if I have them on hand then powder too.

    I've watched her pasta bolognese recipe and she said there that she prefers dried oregano over the fresh oregano since the fresh ones are much stronger 😂😆

    Use less in measuring when using dry herbs vs fresh. Ina should of known this. I love her but she failed on this response. Unbelievable!
