Ice Candy
Ice Candy. What Filipino child does not know what ice candy is? Ice Candy reminds me of summer time when it is so hot that the ice candy was a welcome respite. It was cheap, yummy and readily available in practically every sari sari store.
To be perfectly honest, we never made ice candy at home in the plastic. My mama would make ice candy with only one flavor - Milo. She would put them in ice trays instead of plastic bags. I don't know why but I never asked her why. So, our ice candy were in ice cubes and placed into the glass when we were ready to eat.
In the early days, ice candy was made very simply - milk, water, sugar, flavoring (fruit, chocolate, etc). They are stuffed in plastic bags, sealed and frozen.
Nowadays, ice candies are made with a starch as a binder and stabilizer. There are now more interesting flavors as well as very innovative ways to make ice candy.
Join me as I show you how to make different kinds and flavors of ice candy. May this bring some coolness to the warm summer days ahead.

Hi chef! Can you suggest on whag to add if I want to have the ube flavored ice candy? And, for the strawberry, what can I use if I don't have the fruit?

For ube flavored ice candy, you can add color and flavor with or without ube jam. For strawberry add strawberry flavor and color with or without strawberry jam or preserves.
Thanks for the recipe chef! I do have a question will the pearls harden again in the freezer? If it will, will it have a weird taste to it?

hi chef rose.. regarding the ice candy base ingredients, when you say 1 big can of condensed and evaporated milk, how many cup is that? Im just confused of it a bit

1 big can evaporated milk is 1 1/2 cups or about 400 grams 1 big can condensed milk is 1 1/3 condensed or 390 grams

Kidding aside but Chef Rose , I think you should copyright this ice candy recipe. I am imagining big food corporations rushing to monetize this concoction. Such a novelty and deliciously refreshing . I would hate for the west to lay claim on what is unique to Filipinos. I appreciate you very much for sharing the recipe . The testing , the process in developing the recipe would have been tedious, time consuming so thank you.

About 2 months more or less because the starch will starch to break down.
Is basically like Ice Cream?

This is more like our version of Italian Ice but the ice is not crushed.

This recipe is not made for xanthan gum. You need a different recipe for that since this is the typical Filipino ice candy recipe.
How many pieces po nagawa sa 2lt na basic base?

You can make between 25 to 36 pcs for every 2 liters of the milk mixture. The difference in the number of pieces is the variant ingredient like - mangoes, graham, jelly gulaman, sago, etc.

On magnum ice candy, it is not clear to me how you put the white mixture inside the chocolate. How could the chocolate open up to fill in the white mixture? Please coach us

For the magnum ice candy you can see the whole process with the time stamp of 13:00 to 14:00. To summarize, after you put the melted chocolate and after you spread the melted chocolate in the plastic, immediately fill it with the white milk mixture. As long as the melted chocolate has not yet set, you can open the plastic and fill with the milk mixture. After you tie the ice candy, immediately plunge it in ice water so that the chocolate coating will set - otherwise it will mix with the milk mixture. Hope I was able to answer your questions.
