Doctor Pepper Hot Sauce
Ingredients:
1 onion, diced
2 tomatoes, diced
165g (about 30) moderate heat chilies (e.g., serranos), chopped
4 tablespoons white vinegar
1 can of Doctor Pepper (or substitute with coke)
1 teaspoon table salt
Instructions:
Peel and dice the onion.
Cut out the hard bit from the center of the tomatoes and chop them into small dice.
Chop the chilies into small pieces.
In a small saucepan, combine the diced onion, tomatoes, chopped chilies, and 4 tablespoons of white vinegar.
Pour in the can of Doctor Pepper.
Place the saucepan over medium heat and bring it to a boil.
Let it simmer gently for about 20 minutes, stirring occasionally.
Allow the mixture to boil until the liquid level has significantly reduced, and the vegetable chunks are in a small amount of concentrated Dr. Pepper syrup.
Let the mixture cool to room temperature.
Blend the mixture until smooth.
Taste the sauce and adjust the flavor by adding more vinegar and salt if needed.
Pass the sauce through a sieve to remove any seeds or lumps for a smoother texture.
Pour the sauce into a sterilized bottle.
Store the hot sauce in the fridge, where it will keep for several months.

    First of all, great thumbnail! I never thought of making hot sauce with any soda, but now that you got the idea in my head, I would probably keep it safe and go for sprite or 7up.

    Thanks! 😊 Sprite or 7up are good choices. A nice hit of tangy citrus would lend itself well to a lot of different flavour combinations.

    Ooh, that sounds really good 👍 The fermentation will add some nice complexity. You might want to reduce the vinegar a bit as the ferment will add some acidity, but taste as you go, and it should be great.😊

    I think I might just have to try this. If I like it, I might try it a 2nd time...but maybe with Vernors, instead of Dr. Pepper. I might also try a malt vinegar, instead of the white vinegar. Thanks for the suggestion...and the recipe.

    @@AdventuresInSnackingVernors is a soft drink. The best way to try to describe it would be as an aged, slightly sweet type of Ginger Ale. It's very good...and not as tart, or acidic as regular Ginger Ale. Sort of like the "Dr. Pepper" of Ginger Ales...hehehe.

    I love carrots in hot sauce. This would definitely taste different with carrot instead of tomato, but i think it would still be good. 👍 Why not give it a try and report back? I've never roasted carrots for sauce, as I tend to avoid oil in my sauce.

    You could substitute it with another vegetable. The onion adds body and some sweetness. An equivalent amount of carrot would get a pretty similar result. 👍

    Thanks! Yes, I'm in Australia 😊. The tomatoes are homegrown. They're half ripe black Russians. Even here supermarket tomatoes don't look that good. 👍
