For those worried about the raw egg... If the eggs are pasteurized they are safe from things like salmonella. Spreads like mayonnaise hollandaise, aioli have raw eggs in them. The traditional eggnog drink also contains raw egg

This sauce is similar to mayonnaise Tartar sauce, without capers, olives, mustard, spices and Worcestershire sauce but with cheese. To pasteurize eggs, you must break them, mix them and heat them to 68 degrees Celsius in a water bath. With beaten eggs, you are unlikely to emulsify the sauce. Raw eggs can be successfully replaced with boiled ones, by making the sauce first with the yolks and a tablespoon of water and then adding the egg whites and other ingredients.
