I have never been keen on very noisy bikes, as I use my bikes for everyday transport. But last year I bought a small bike for town transport, being Euro 5, it was whisper quiet, eventually I knocked out a couple of baffles, not because I wanted to make more noise, but because I got fed up with smartphone zombies stepping out directly in front of me.

Removing the silencers will normally cut the power at the lower engine speeds. You have removed the back pressure so some of the mixture escapes before it fires. There is no advantage to doing this at all unless you have set up for racing. There is a compromise but the standard exhaust of that 500 are the best it can have.

I prefer fitting rear footrests at 45 degrees angle so they folds upwards/backwards. Back in the sixties many of us had straight pipes. But they shall be longer. Otherwise you gets less power. Pipes about the length of the muffler. Also bigger main jets. Got bad hearing back then. Funny thing, fitted an original muffler instead of an aftermarket to the Vincent. Probably the most plentiful models are the T140 Bonneville 750s from the 70s and early 80s, which are cheaper than the 60s 650s, certainly here in the UK. You can still buy almost all the parts for these, new, off the shelf from quite a few specialists, so they are a very practical classic to own (I've had my 78 T140V for 29 years now). I tried starting mine up a few years ago without the silencers (mufflers) fitted to see what it sounded like, but, to be honest, it wasn't much louder than with the Norton style pea-shooters it normally has (they are straight-through anyway).

You really should find the closest Vintage TT race and you will be amazed! I put a set of performance TT pipes on my Bonneville with built in silencers.
