I made this knife sharpening jig

Ғылым және технология

Knifes are notoriously hard to sharpen well because of their curved cutting edge. It is difficult to hold them at a consistent angle on the sharpening stone and I often end up with a blade that is rounded over rather than razor sharp.
There are a lot of different designs for knife sharpening jigs but I wanted mine to be as simple as possible. I do not need a super accurate machine with a fancy complicated mechanism. For most purposes, a sanding block on a stick that runs through some guide hole works just fine. I gave mine five holes for different angles but I don't think I will even need all of them.
It works great - I don't even dare to put the knife I sharpened in the video back to the kitchen!

    I'm really pleased with this! It works like a charm kzread.infoUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ Takes less time than my old electric sharpener because it can take more off the knife faster, and then it smooths out nicely with the finer grit polisher. I don't know how long it will last before the grit wears away, but I wouldn't mind having to replace it every once in a while.

    Great video. I made this few years ago. I use some eye screws (eye hooks) instead of many holes. For clamping the knife, I plant a neodymium magnet on the base (flush with the surface). It hold the knife steadily and it's easier to flip each side of the knife while honing.

    I have a question, what about the angle? The arm of the sharpener moves in a circular movement. The blade would have to be curved aswell. If you have a knife that is straight, in the middle it will be fine but on both ends the edge is going to start to (sorry for my english) move upwards and take a lot more of the material. Is there a way to compensate for that?

  • @imadethischannel

    @imadethischannel

    2 жыл бұрын

    Hey, good point. The whole thing is of course not perfect. But for relatively short blades it gives good results. I think the exact angle or small changes along the length are not as important a consistent honing angle.

    Thanks! I don‘t have a plan for this. I made it all from scrap pieces I had lying around. The dimensions don‘t really matter. The only important thing is the height of the holes. You can construct them in the way shown in the video. Also, the exact angles are less important than the consistency you get from having a jig like this.
