Greg's Mojito:
Build in glass
Lots of mint leaves (or sum some other herbs if you are feeling adventurous)
.5 oz. or 15 ml. simple syrup
2 oz. -or 60 ml. Rum (Plantation 3 Year)
1 oz. or 30 ml. Lime Juice
Muddle lightly
Add ice and give it a stir
Top with seltzer
Add a straw
Garnish with sprig of mint
Anders Erickson's Slow Mojito:
Build in glass
Lots of mint
3 Bar spoons demerara sugar
Stir for a minute to express oils
1 oz. or 30 ml. Lime Juice
2 oz. or 60 ml. Rum (Hamilton 87)
Add ice
Top with seltzer
Add straw and sprig of mint

    @@GamingNormaly Yes it is, a standard simple is 50% sugar, a rich 2:1 is 66% sugar, making it about 1/3 sweeter that a 1:1. Its a common misconception that a Rich syrup is twice as strong, or at least 50% stronger, but when doing the maths and accounting for the full volume the difference isn't actually that large. An ounce of 1:1 is 15g of sugar and an ounce of 2:1 is 20g.

    My favorite uses Thai basil instead of mint and lychee liquor instead of simple syrup. I usually use vodka vs rum.

    I think it changed the cocktail a lot for not mudling the lime, because of the oils and it also helps the sugar dissolve more

    @@AxCE12 Well now I just had a maybe good idea? How about a lime and mint mojito base, using nickel Morris’ super juice technique? Or maybe an oleo saccharum? You might be able to cut out some of the work or also impart some of the lime zest oil into your drink as well, that you might be losing just using juice instead of muddling

    Thai and Italian Basil is distinctly different, I might try both types and traditionally we would use mint and other herbs in Pho aside from the basic T. Basil, beansprout, lime, and jalapeno. It's apparently supposed to be eaten in the summer to cool off but we struggled to sell soup in the summer in the US.

    There’s a pizza place/bar where I went to college that made basically a cherry-basil mojito with a house basil sour mix, black cherry rum, and soda. They’d sell them for 2 bucks each on Tuesdays, plus the pizza was good too.

    Thai basil is probably my favorite herb, the anise flavor is so good in so many things. Mine was hit with downy mildew last year and I cleaned everything up, this year there aren't signs of it yet... fingers crossed. It would work great in a lot of cocktails but it is less minty than mojito mint and more basil forward.

    Greg, I agree with you about cocktails not really pairing with food. With one exception, and that's SNACKS. A wet martini with salty popcorn, or cheese crackers, or a dozen raw oysters is a very beautiful thing. A Julep and some salted pecans. A daiquiri and plantain chips and dip. Basically, I like drinking and I like snacking, so I do them at the same time.

    I think it's more like, obviously things can go together well, but the degree of specificity people take it to seems a bit much. I'm sure plantain chips and dip would go equally good with bourbon or tequila, and literally anything salty could be paired with a martini, or a beer.

    Strong agree, a margarita with mexican food kinda works but really most cocktails dont work with a dinner, but plenty pair great with snacks. Blue cheese on crackers with a Jamaican rum old fashioned or an el´presidente was a fun surprise I put together one evening.

    @@nevadanate4957 I think tequila would work moderately better (I assumed blanco here) because in general it is moderately easier to pair unaged spirits with salty snacks and aged spirits with desserts. Sour and/or botanical-focused cocktails (sours and martini/negroni-esque as opposed to Old Fashioned or "heavier" drinks like flips, nogs, or certain fizzes) are among the easiest to pair with food but tend to lack specificity: they'll go reasonably well with lots of things but saying "this meal demands an *XYZ*" is easier with wine or beer styles than with cocktails. I differ from Greg in that I think that enjoying pairing options can be part of enjoying food and drink, but people shouldn't pretend that their choice or guideline amounts to much beyond the combination of a general set of principles of balance, contrast, and reciprocal refreshment (each bite/sip clearing the impression of the last sip/bite so that each taste can be experienced de novo rather than as a gradual descent into palate fatigue) and their own subjective set of preferences.

I've enjoyed plenty of salty things with aged whiskey, tequila reposado...     Lowe's (and probably other stores) sell a variety of mint called "Chocolate Mint" that literally smells and tastes like mint chocolate. I was skeptical until a bought some and crushed a leaf in my hands and it smelled exactly like an Andes mint. I haven't tried it in a mojito yet, but I'm curious to see if it would work.

    I was thinking similarly. At my local nursery there’s like 20 varieties of mint: mint julep mint, Kentucky chew mint, chocolate mint, pepper mint, spearmint, etc etc. Would be great to see the same episode but with a bunch of different mint varieties.

    I've seen apple-mint, pineapple-mint, and orange-mint at Home Depot. "Hyssop" is another name for licorice-mint, and "lemon balm" is lemon-mint. I've also heard of grapefruit-mint, banana-mint, and strawberry-mint.

    The best mojito I have ever had was at a resort bar in Jamaica. The bartender used local wild mint he picked on his way to work. It was more herbal than the stuff we have in the US. They were ridiculously good and ridiculously strong.

    Saaaame! Also, Greg's perspective and descriptions help me determine pairing for cigars for my customers and clients, without having to force myself to try drinks I know I wont like. This would lead to a very biased perspective on drink pairing with a cigar in the first place.

    Hey Greg! Keep in mind that on Ander's version he doesn't use lime juice, he muddles the lime peaces with the mint and the sugar, that adds a lot of the Lime oils to the mix and it works amazing. Try that, great channel!

    We have been making a drink very close to the Slow Mojito for several years now. We use white sugar, and we don't measure the lime juice, just squeeze in half a lime with a citrus juicer. Our favourite rum for this is El Dorado 3 year old.

    @@GoTraveling1 If you have any place to grow plants, mint is very easy to grow because it's literally a weed. I love having fresh mint in a pot - I never even have to go to the store.

    My Drink of Summer is typically the Corn n oil. So easy to whip up, and its hard to beat. Drink(s) of Autumn: Vieux Carre and Negroni or Boulvardier Drink(s) of winter: Penicillin, mulled things, straight punt e mes and port. Drink of Spring: Last Ward; Naked and Famous; Paper Plane, etc.

    I lived in an apartment on the beach and we had mint that took over a portion of the yard. Needless to say one summer it was severely culled. We used load and loads of it! You can never have too much mint on a hot day. FYI it can be invasive if you plant it somewhere be careful. Granular raw sugar is the main trick to pull the mint flavor when muddling. I use a combo of raw sugar to muddle with a splash of simple for lube. A dash of rose water is nice too!

    I grow mint just to make mojitos, unfortunately I live somewhere where I plant it new every year and it's not ready yet. Because of the invasiveness I grow it in a pot.

    @@minuteman4199 Yeah, mint and basil both do really well both in pots and indoors, so you don't even need a yard to have regular access to these.

    You should try 'cilliantrito' with tequila instead of rum. I found that cilantro and tequila complement each other surprisingly well.

    I'll have to try cilantro and tequila. When I think of cilantro in cocktails, I think it could pair well with gin if done with subtlety. The seeds of cilantro are the second botanical in gin, so it wouldn't be too far off the profile.

    Greg, here me out. Go for the granulated sugar instead of simple. Go with two teaspoons and instead of club soda, use ginger ale. It is my go to Mojito!

    The variations with different herbs was interesting. I wonder how the basil version would compare with thai basil as opposed to the standard italian kind. Not gonna lie, when I clicked on this, I was expecting another Will It [insert drink here] episode lol. Maybe that would be a fun one to do down the line?

    For me the drink of summer is the Mai Tai…but that was helped when I found a bottle of Smith and Cross at my liquor store. Always great content Greg!

    Recommendation for NA option: make a smoothie using an herbal tea as a base liquid rather than juice or dairy/dairy alternative. I made one recently with a Tulsi (aka Holy Basil)-spearmint-rose-linden combo and dragonfruit and it fills a similar niche while somewhat avoiding the common problem of "this would be better balanced with alcohol" for non-non-drinkers by improving on the texture and color dimensions.

    I love mojitos, they're one of my all time favorites. I was excited to see what type of fun fruity variations you would do...but HERBS?? What a surprise and holy hell those were so cool looking. I loved the line up. I'd definitely try basil, I think that would be amazing. Sage seems so pungent idk if I'd like it. I love rosemary, gin, and lemonade, so I'd give it a shot as a mojito too.

    Best mojito video out there, ...because it's the anders video plus more. I've been rocking the mojito since like 05 playing with it, and these recipes are spot on. Glad people are catching on. I can order decent ones outside the carribean most of the time now. Gonna have to try the basil and sage. Thanks and cheers!

    I like to make myself a "dirty mojito". I use demerara sugar, 1 oz Plantation Stiggins' Fancy Pineapple, 0.5 oz Plantation OFTD. It's delicious!

    Friends of ours pretty much always make mojitos during summer parties. Always with a lot of brown sugar, like a lot. Makes it very sweet and even more dangerously easy to drink even for me.

    I'd vote for both the Plantation 3 Star and the Hamilton over Bacardi, every time. One of the reasons to use the quartered limes, is that you get the oils from the rind in the drink when you muddle them. If I were going to use Sage or Rosemary, I think I'd add a leaf or two to the normal load of mint. Lime and Thyme go together great, imho, so I would go with that Thyme syrup.

    Ever since I watched this episode I’ve been going mojito crazy. 😆🤪 I’ve also been dying to try a Lavender Mojito (may not not souly lavender maybe more lavender mint) I’m just hesitant because I can see it tasting like soap. 🤷‍♀️ If anyone has tried a lavender mojito please let me know how it turned out!

    I came into possession of a jar of mint jelly and I have no other use for it so I decided to try my hand at making a mojito with it. I left out any additional sweetening since the jelly has that included, and I'm fairly impressed. It's not nearly as nuanced as a mojito made with fresh mint, but there is something to be said about a well crafted, neon green, "basic bitch" mojito.

    I love your channel and have been a long time supporter. I also love a classic mojito. Love the variations by fruit as well. Peach, Mango, Passionfruit... The latter may be my fav. But for another drink of summer, we recently started to really enjoy the Paloma! Very refreshing when made, as we do, with Fresca instead of Squirt. 0 calories in Fresca also helps keep the 'kini bod! Last vote for a possible drink of summer would be the Caipirinha. Very refreshing and summery! All those wonderful people in Brazil can't be wrong.

    I would be curious to know how the various herbs taste as an addition to a traditional mojito rather than just standing alone. So basil and mint, thyme and mint, etc. maybe like half the normal amount of mint and supplementing the rest with your other herb?

    Recently I’m fascinated by the idea of whiskey and herb cocktails. Do you know of anything that exists, or would you have any interest in experimenting? I’m particularly interested in sage, rosemary, and thyme - I feel like they would have the ‘strength’ to stand up to a good whiskey.

    I’m one of those who’s asked Gregg about food and cocktail combos, awkward 😆 I’m surprised by your take here though. Food and drink pairings I’ve always found to be hugely important. There are many drinks and foods that I love separately that don’t work together at all. This is the case for beer and wine especially. Cocktails are all about bringing together individual elements to make them more than the some of its parts, food and drink pairings do the exact same thing. Not throwing shade, big fan. Just would have bet a lot of money that you’d be someone who’d appreciate the impact of what your drinking on the meal your eating.

    I'm just going to put this out, but in the Southwest at least, the drink of summer should be ... WATER! We're running out of the stuff AND we're in a heat wave/super drought! Shouldn't be drinking alcohol when the temps hit 120 Deg F. (That translates to HOT for those of you using C's instead of F's. like 48 to 50 of those C's.)

    The drink of summer is the Gimlet. And I have experience with this. Last year I went down to D.C. to pick up some wine from my (former) favorite wine shop. It was high summer and the temperature was near 95F with high humidity. Dinner was at a place in Georgetown having its opening night; the place is very close to the stairs featured prominently in "The Exorcist". I walked down the hill to the place from my hotel room, over a mile away; I was pretty overheated by the time I got there. First drink I ordered was a Gimlet. And it was pure bliss; it was a perfect refresher in the summer heat. Since then I have found out about the Morgenthaler lime cordial (through this channel) and made my own Gimlets, and I love them with a passion. They are the drink of summer.

    Great video, and love the herb experiment. If you like thyme one of the things that's popular when I'm entertaining is Farigoule, which is this Italian thyme liquor. It's very good, particularly if you skew ginwards

    Yes, mojitos have been the drink of summer here! The Anders Erickson method is my favorite. I do jump a bit off the beaten path as I love my mojitos with rhum agricole, specifically Clairin if possible!

    i love the idea of switching herbs. I just tried two versions with a mix of mint and basil/sage. and the basil version with a split base of white rum & strawberry-infused white rum. they definately need a lot of fresh basil/sage to keep up with the mint but actually i love both of them….that said I enjoy them on a hot night in the city after some slices of awesome pizza!!😎😍

    So before I watch this video, every bar/ restaurant I run I add Dave's Ultimate Mojito (Ultimojito) to the menu. Its sacreligious from a "mixologist" point of view. I contains a homemade caramel and peppermint tea syrup. Nice and simple. Weigh 500g of sugar and heat on a low heat occasionally stiring until it melts and caramelized allow to cool, then weigh 500gram of tea temperature (Not boiling) water and add 3 decent quality peppermint teabags and allow to cool with the teabags in, mix the two together and stir until incorporated. You now have nearly a litre of caramel/mint syrup. Ultimojito: Its 35ml gold rum. 25ml of home made Caramel and peppermint tea syrup. Half a fresh squeezed Lime Extra dry Prosecco to top. Fresh mint and lime wheels to garnish It's a builder no muddling. Just whack it in a glass filled with crushed ice minus the prosecco. Give it a quick stir to incorporate then add the prosecco. Garnish with lime wheel and mint sprig Understated but still present mint, slight dryness from the prosecco, tart from the lime, smoke from the gold rum and sweetness from the caramel and you can just speed them off the bar all evening with perfect consistency each time.

    Big huge fan of mojitos, theyre always my go to drink!! Theyre very popular in pr and most local restaurants and bars have so many variations that id love for you to experiment with (like strawberries, mangoes, soursop, coconut) my personal go to is always a passion fruit mojito
