The Gimlet, a Cure for Scurvy | How to Drink

Тәжірибелік нұсқаулар және стиль

A deep dive into the Gimlet and three recipes you can use to approach this drink, I think you'll like this one!
I was surprised by what I found when I started looking into this drink, but I guess I shouldn't have been, honestly I just didn't know all that much about it. It turns out that the Gimlet is a drink with real deep history. It goes back to the age of sail, and was created mainly out of a need to prevent and cure scurvy, which was a horror for sailor's of the time. Initially the lime juice being administered to sailors had to be preserved in alcohol, but later when Lachlan Rose discovered another means of preservation, well... they put that in alcohol too. And that is the gimlet! There's some debate on where the name originated from, personally I'm not sure Sir. Dr. Thomas Gimlette ever existed, so I hold with the idea that it's named after the tool you open the barrels with.
Slowly but surely, I'm starting a mailing list so that I'm not fully dependent on YT's algorithmized notifications system. If you'll sign up, I promise not to abuse your generosity, or sell your info to anyone. It's over on the blog right here:

Have you though about doing a Gimlet whit an Old Tom Gin or something that’s been barreled? I’d have assumed it would be more like what the sailors Drank as most spirits were transported in barrels in ships? I’ve got some kicking around. I find it makes a super interesting variant of of this drink, somewhat more aligned with a whiskey sour than a gimlet but it’s something you should dabble with.

Greg, love the episode. One minor quibble is that the limes you used to make your cordial (and the overwhelmingly popular breed in grocery stores) are Persian limes. When the gimlet was developed, Persian limes didn't exist. Most likely, the original cordial would have been made with key limes. If you scratch and sniff the essential oils from a Persian and key lime, you'll (probably) notice that the key lime is *much* more pleasant. Next time you run out of cordial you might try those instead and see how it works for you!

One of my main takeaways from this, Rose's make a different Lime Cordial for the US market from it's Native UK one. Seriously the ingredient's in ours are (as diluted): Water, Lime Juice from Concentrate (5%), Sugar, Citric Acid, Flavourings, Sodium Meabisulphite and Colours in the form of Carotene and Green S - so no High Fructose Corn Syrup (a very common difference between US and UK food/drink products), Lime Juice being more prominent, plus more Citric Acid in ours. I do wonder though, if we sent Greg some UK Mixers (not just Roses but anything else we can think of) would he do a side by side tasting of UK vs US mixes to see if there's a big difference?

I think that would be an awesome idea honestly. I still laugh at Europe sending back whole shipments of Fireball because the American version was sent to them and it didn't meet specs. Raised people's awareness of Fireball out here in the US....for a little while at least. Till people saw the next shiny thing, which might have been Canada sending back medicinal weed grown in the US because it was too inferior to what they already had. Something like that. Anyways. I think it's a great idea!

We (US) are cursed by abundant supplies of (government price supported) corn. So we get the gaddommed Corn Syrup and HFCS. Stuff made w/ it tastes different from "Real Sugar"* but mixes pretty well w/ Bourbon, the latter being corn-based. * Real Sugar. What we have is mostly beet sugar, as I believe is the case for the UK. Rainy tropic climes get cane sugar mostly... it grows like weeds there. It almost seems some of these companies would make Real Sugar versions of stuff, at higher prices, for the "drink snob" market.

I had my first gimlet at a Georgetown restaurant, on their opening night. The cocktails there generally were excellent but this was the perfect one to start on a hot summer day. I am pretty confident it was the real deal and not a fresh lime juice version. After watching this video, I made the Morgenthaler version of the lime cordial. The gimlet I made with it was absolutely fantastic, very much like what I had in Georgetown. Even in winter it is great drinking. So I owe Mr. Morgenthaler and Mr. HTD a debt of thanks.

I had a gimlet made from Roses (per the story) and Plymouth navy proof gin (57%abv) apparently Plymouth supplied the Royal navies gin, it was never London dry style, and of course it would need to be navy proof to avoid damp powder, either way it was very very good for 11am !

The default of 2:1 syrups has really been messing me up lately. Most often, I think of "simple" as 1:1 and "rich / rich simple" to be 2:1... I don't often see 2:1 called "simple"

  • @adambanas6365

Yeah same! I feel Greg should address this at some point. I have a cocktail book that states simple syrup as a 1:1 ratio and calls the 2:1 ratio sugar syrup.

@@adambanas6365 I also feel like he switched over time or takes a recipe that's originally 1:1 and uses 2:1 in the same volume (probably what happened on the second gimlet)

2:1 simple syrup is only about 30% sweeter than 1:1, so the compensation is really quite small, especially in the quantity that will exist in a single cocktail. Most generally though, recipes are laws for bartenders who need to serve exactly the same drink every single day forever. At home, if you think your drink needs to be more or less sweet based on the liquids you've assembled, then... make what you like!

agreed, using 2:1 simple simply bc you can keep it indefinitely at room temperature is not worth it. just use it faster or make room for it in the fridge

Glad to see one of my favorite drinks on here, and particularly glad to see Morgenthaler's Lime Cordial getting a shout. I pretty much always keep a bottle of it in my fridge, am constantly looking for excuses to use it, and it's easy enough to make that it never feels like a chore when I finish a bottle and have to make another.

I discovered the gimlet a few months ago and it became my fave immediately. I searched the HTD channel in vain for information about the gimlet, and I felt it was a significant omission, but you covered the sour so I figured that you kinda covered it. And now this episode totally makes up for that missing piece. I'm looking forward to making homemade lime cordial now. Thank you!

A suggestion for getting "better" color: I made the lime cordial here with key limes and key lime juice. The color came out more yellow-green like Rose's. I just used the zest of 8 key limes to get the equivalent zest (surface area) for 2 regular times (Approximately spherical so half the diameter means 1/4 the surface area). It was delicious as well. Thanks for sharing the recipe.
