    Again, there is obvious implicit bias here. I will always clearly articulate when that is the case. But with the PSDs, multiple blind and double blind tastings with colleagues, etc, I tried my best to be as objective as is possible. I want to reiterate what I have stated in the caption above- this by no means is a financial necessity on my part. I work full time in an incredible job with Onyx Coffee Lab as a wholesaler of roasted coffee. This is where my food comes from. I do NOT rely on KZread or on any project like this.     Hey Lance, I'm a new coffee enthusiast who is looking to upgrade my breville grinder. With so many options , an the niche being everyone's 1st choice, I'm having a hard time choosing. And I'm looking for it to be use for espresso mainly. Also I saw the 078s sculptor and as of right now it's my 1st choice. What do you think? Max budget $750

    *update* I'll go $1k for a grinder if it can be justified. Reliability, quality of grind, NO stalling, and style points. And being put in a position that I would not need to upgrade. Or feel wanting more.

    I am a blind content creator . Maybe you didn’t think about blind people when making the manual grinder, but it was indeed suitable for me as a blind person. I really liked it after trying it at a coffee shop and decided to buy it immediately. The ease of accessing the control knob and the clicking sounds helped me measure the grind settings accurately without relying on sight. Also, the stability of the grinder on the table made it difficult to accidentally knock it over. Even the ease of removing my grinder burrs for cleaning, all these things helped me as a blind person to accomplish the details of making my coffee in an easier way. Perhaps they are simple details, but for blind individuals, they mean a lot. Thank you for everything you have done, and thanks for keep helping me in my journey to learn how to make the best coffee cup 🙏

    I very much appreciate this long, and in depth video; not so much that I'm interested in buying this grinder, more so that it went a long way to help me understand, or, if not truly understand, but at least demystify burr sets and unimodality. It is truly mind bogling, and, as far as I've been able to find, you are the only person really delving into this!

    Just had a first spin with mine with the Lance set. Made some siphon brew with a light roast, 8.5 grind setting, 21g, 300ml @90sec (tastes like this could use some tweaking, a little on the weak side). I see now what is meant by bringing out clarity. This is my first flat burr grinder, it is very well built and feels great grinding. I love how small this thing is compared to electric grinders, I almost went electric until I saw this video and am glad I went with this grinder. Thanks for the video and your contributions to the coffee community and now industry!

    I really appreciate your passion for burr sets and the PSD data. As a chemical analyst, I probably use the same instrument in your data analysis. Because of your thorough reviews (and Jonathan Gagne's blog) , I recently received my EG-1 V3 and use the Ultra Burrs exclusively for espresso and pour over. It is AMAZING. Thank you for your content. I think the Pietro with Brew Burrs would be a great way to enjoy very similar filter coffee for travel/work. I like the engineering of taking a burr set that would traditionally be used in a powered grinder and implementing it in a hand grinder. I own a monstrous OE Pharos I used to bring to work 😂

    that's awesome! So glad you are enjoying the EG1. Still my favorite thus far. ULF burrs by SSP at the 80mm size are hard to beat- and I have the 98mm versions. Pharos is a beast!!! you're dedicated!

    The ergonomics for this are exactly what my dad with arthritic hands is looking for in a grinder! Stoked to see a quality looking vertical flat burr hand grinder. Also, I'm jamming on the tuxedo sculptor shenanigans in the background. Glad you're being thorough and apparently having fun.

    Cool to hear that the "deep sea fishing" method of using it actually helps with a slightly better particle distribution, as I just discovered that way of using it myself yesterday, and found it much easier than holding it on the table. I've been loving the clarity, as well as that "body" or as you say "smoother body", in the cup. It's not "tea-like". The week prior I had a local roaster grind a bag for me on their Mahlkonig, and then this week I've been using the Pietro probrew, and it actually seems like I can taste and smell a lot more with this grinder. Definitely way more than I've had with 64mm HU, 83mm stock on DF83, and a Flair Royal hand grinder, too. Very glad I jumped on the preorder for this...I was about a day away from ordering the Ode gen2 with MPs, but then serendipitously saw someone talking about the Pietro and went for it.

    Thanks a lot for the great review! As a early owner of the multi purpose version, I was excited to wait for your in deep dive into the Pietro and Pro Brew burr set. Definitely will be ordering your burrs to compliment the multi purpose. Funny, you have not really expanded on espresso cup profile for the multi purpose but I can see some similarities with the pro brew in terms that compared to some conicals, it’s more defined and velvety instead of body. Also made my best turbo shots on this. And while I agree that a JMax fills the bill, for me the Pietro has been a clear step up in terms of cup profile. For some reason, I feel the blind burrs are partial to that feeling. Would love to see what grind distribution looks like (from a technical perspective) on these burrs. One point you didn’t mention is that even if you don’t do the step less mod, there is no drift when setting it between clicks (was a worry for me as I find it hard to believe the 15 microns adjustment per big click based on my time experiments with shots). On the other side, quite disappointed with the design of the base. I am sure it will make grinding less wobbly, but it stains the design (it’s gorgeous on a counter top as is). Let’s see the final product though.

    I was skeptical about your bias but no you were right! Hoon's coffee tried Pietro with the Pro burrs using blind tests and found it preferable over all other manual grinders including Fellow Ode Gen 2. They have made several videos, check it. I also got the Pietro based on our word about a month ago. I am very happy with it thus far (except for the weight) but I haven't compared it yet with my DF83 with SSP HU. Overall, yes, I think you were honest and your findings were not biased. Great work!!

    Awesome video as always! I get so excited when you start your video with a disclaimer about how long an in-depth it is. In regards to the "beans aligning the burrs" situation, I know people have a real problem with that. I've seen a lot of talk on Reddit about it and I, myself, have argued with people about it. People who ignorant about manufacturing or engineering want the grinder to be 100% perfectly aligned and have 0 movement. My thoughts are that many premium manufacturers have said exactly what you said in this video regarding the beans influencing alignment. This tells me there's probably something to it. Commandante, Weber (with the Key Grinder), and now you, to name three off the top of my head. I think it would be a really cool video idea for when you get your laser particle analyzer, to compare multiple of the same grinders with visible "defects", or whatever it's called; where it looks like there's misalignment but when you put the beans in it works itself out. I think that would go a long way for our little community to help assuage people's fears or misunderstandings about having perfect alignment and perfectly rigid materials.

    Magnetise the base and design the grinder 'holder' to receive, & hold, it at a slight angel. Free hand rests on top of the grinder. Faster easier grind.

    Hear me out Lance! Imagine a hand crank single dosing EK43S. Same burrs and design with a weighted flywheel at the back of the unit. Drop a dose into the gated hopper. Start turning the flywheel and crank it up to a fast speed. The spinning weighted flywheel will keep the burrs spinning rapidly with momentum. Open the gate and the beans fall through. You can still continue grinding normally. Use the fun bag knocker. Threaded attached catch cup to eliminate static mess.

    This is really informative and exciting. I hand grind my espresso on an Arco, so probably the added value from this grinder would be in the unimodal burrs, to have a weird/different/contrast.

    This looks like a great idea, great grinder for great coffee... but bad user experience. Handle should be longer so it doesn't shake so much. Shown accessories (stand etc) should be part of the package for this price. Even then, awkwardly positioning your grinder on the edge of the table just to make sure you don't hit the table with your hand while grinding is just a weird design choice overall. Kudos for pointing the issues with it it, being top heavy with a short handle. Honestly I don't care how many 'design awards' from 'designers' product gets, I'd rather see it getting engineering awards and user experience awards :)

    Hey Lance, thanks for the video(s). I'm now an addict... You say the pro-brew burrs work for espresso, too, if one likes the taste. I was thinking of buying them to supplement my Mignon (which, you've said, works better for darker roasts) for lighter espresso roasts. Does that make sense or am I setting myself up for failure? Sorry for asking for personal consumer advice...!

    Totally respect you not wanting to use this more on the platform, but i personally would love to see more comparisons on your Patreon or something. I totally understand having a bias towards it, but im more interested in the different profiles compared to other grinders. You don’t even need to say which one is better or worse cuz there’s no such thing. They’re all different, and i think it would be interesting from the burr guy to hear how they’re different.     I bought a Pietro grinder with Pro Brew burrs. Sensational, but I have a doubt. You say that the grinder shines if it is adjusted to around 8. I think the grain size is too big for my grinder, for several coffees the pour over time is less than 2 minutes around 1'30". What you presented I understood to be a prototype. Did anything change for the final production? Please, can you tell me where I can find a map of the grain size in micrometres depending on the value set on the grind dial?

    Hello Lance! Did you make the espresso with the B-Modal burr set or with the M-Modal burrs? Does the M-modal burrs capable for espresso also? If yes, in terms of flavors, what is the difference between the two?     As my shoulders are bad, the vertical movement would be easier than the normal horizontal turning motion. Would this grinder produce espresso grind as competently as the better current hand grinders? I have a Ode Gen 2 for other brewing styles. Nice video, Lance.

    i just got one with both burr sets (came with MP so that’s what i’m trying right now, but CANT WAIT to swap for probrews!) … but is it just me or do the MP’s create a staggering amount of fines and i’ve sadly not been able to find a convincing brew yet (previously owned grinders being JXpro and Ode/SSP) … also any tips on approximate grind sizes or particular techniques for the MP ?

    I'm just sad that this is unlikely to find official distribution where I live because this is pretty much my ideal upgrade path. I've been acclimated to the hand grinder workflow since I started with coffee, and I'm quite hesitant to go motorized, even for the sake of trying flat burrs, because of the added cost, complication, retention, and thus cleaning. Knowing that the pro burrs have your direct input adds even more to the appeal, given how much you have your hand on the pulse for enthusiasts, without the compromises to the casual market that a big corporate designer will push for. I'm really just hoping that there's some way to get this here at a price still reasonably close to MSRP.

    Lance, really love the innovations, like goes by default! Couple of questions: do you know a US retailer that will sell your burrs? Espresso parts seem to have the other ones. Also, on Ode SSP, would you also recommend doing the stepless mod (taking the little piece out)? And what would you do to that astringency you got in the video, if you didn't have the other grinders? Just go a step coarser?

    It’s has great aesthetics, it feels very good in your hands. Love the build quality and cleaning looked very easy, but the grinding experience is not enjoyable. I tested it at their booth during a coffee festival. I wanted to have one, but the price and experience of grinding made me have second thoughts. The vertical rotation of manual grinding is just a clumsy method, even if you would have an additional separate stand. So instead of buying another hand grinder (as I already have quality manual grinder), I decided to buy a timemore sculptor. Anyways, great videos as always!

    I don't disagree with that decision! I agree- it is very clunky without the base. Using the base makes it much better. Vertical mounting is not an issue considering a minimum of about 80rpm is being applied. This will cause more than sufficient centrifugal force to overtake any effect gravity might have on the grounds coming out. but the sculptor is a great decision!

    is it heavy? looks like it is. I think flat burrs is just too difficult for hand grinding, I'm sure there is a small market for it, but at that point, is it "worth it"? I mean it might be for some people for me, I'm using a hand grinder if I'm traveling and I am just less picky overall because of it. I have an Arco hand grinder traveling now, had an Aeropress but silly me I forgot my filter cap >.< so I purchased a chorreador (have a shorts on that on my channel) and I don't even have a coffee scale (gasp!) I don't have the same palette as Lance so I'm happy with the coffee I'm getting

    @@GadgetsGearCoffee The Pietro is for sure too heavy/Bulky to travel with 😂. What a coincidence, I have a GOAT Arco hand grinder too. If I can’t travel with the Pietro, I might as well spend the same amount of money on the Timemore Sculptor that just sits on your bar. So you’re traveling now and don’t have all necessary tools at hand? Anyways your palette can be developed over time if your a foodie and are open to taste/eat with all kinds of spices.

    perhaps! not sure if Pietro is open to this. I had other ideas I think would have elevated the grinder, but weren't taken. They did do a lot of what I asked, which were all aimed at the cup profile. Ergonomically, I had lots of other ideas haha

    I am using this grinder with pro brew set. The espresso (it can make espresso, when the grind setting is almost zero) is so much much much better than my niche. And the pour over is also much much much better than my kinu m47 with pour over burr. But Lance, I wanna make this grinder better, so is it possible to do alignment on this grinder?

    Also I am really curious about that cause my unit just stalled brews at the first brews. Maybe the reason is seasoning but I can hear burr rubbing when Im not even putting force on the handle. But the taste of the brews are not way off at the same time this is my first flat burr grinder so when it comes to allignment I really need the info.

    i recently have pietro MP (but no base) and jxpro, and grinding for espresso with pietro is surprising almost as easy as filter, and yes easier on the turning arm than the jxpro! but without the base, that means that both for filter and espresso (maybe a bit more for espresso) it really does move around a lot! the fisherman’s belly hack really helps! its the holding arm that gets tired!!

    Minor point. For the price, these should come with a tool set, including the small wrench, in a little bag. I don't love the design, it seems like it was primarily designed for looks rather than stability. I get that the optional foot will help, but it does make me shake my head. Obviously, stability should have been part of the design philosophy. I'd also like to see some kind of anti-static technology built in, rather than banging it on a table.

    I've just gotten the Pietro with the ProBrewing M Modal burrs. I've gone to the maximum setting, and my V60 would not brew less than 4 minutes. And I was hoping that it's going to be closer to ULF, but there are quite a lot of fines. The bed was quite muddy. Water temp was at 96C. What am I doing wrong? As a note though, the cup isn't bitter at all.

    Great vid as always Lance! I got my Pietro this week with the bro brew burrs. Ran a kilo of dark beans through it for seasoning before use. On the fence about it at the moment - I absolutely need that stabilising base, can't wait for it to come out. Finding it way, way harder to dial in compared to the 078 (I totally get why, with the latter being a lot more forgiving to dial in). With the washed Kenyan I'm currently drinking I'm having to grind coarser than I'd expected (given it has low fines) to avoid a stalled brew using Hoffmann immersion method on Hario Switch 03 with tabless Japanese filters. Perhaps it needs more seasoning. Still not managed to hit the sweet spot. Setting 6 stalled, 7 was slightly hollow and too sour. Been trying settings in between for last couple of brews. There is absolutely more clarity and less body than the 078, but I haven't managed to get the sweet spot between astringent and sour (overly acidic) yet. Could also be the coffee I'm brewing is finicky. I think my palate also needs to adjust from brewing near exclusively with the 078! Which just produces phenomenal cups in my experience - thanks for tip there Lance 👍🏻 Keep up the good work 😊

    definitely the base is needed. I am strong on that. I told them before agreeing to officially come out with my cooperation they needed to have one. And seasoning will help but shocking to hear about the stalling! I have had quite fast brews with mine, to be honest. Very odd! hmmmm. Seasoning will help. And, tbh, I haven't used the DLC coated burrs yet. I bet they need loads more seasoning than mine did since mine are not coated at all. They likely seasoned really quickly.

    ​@@LanceHedrick You said you're brewing 8-9 on the Pietro in the vid for filter. That seems quite coarse compared to me, but you're doing percolation... How much finer would you go for immersion based on your experience? (I just do a pretty straightforward steep and release) This could be another factor for me to consider. I just hope I don't have an alignment issue, as grinds don't appear as consistent to my eye compared to the 078 (more boulders)... 😅 Am doing a bit of troubleshooting with the manufacturer, so hopefully I'll get to the bottom of it

    to be sure, I have my burr touching pretty aggressively at 0. So, you may be calibrated differently. For immersion, with my calibration, i'm going to around 5-6. Hope it isn't an issue with alignment!

    Could have rotated the hand crank 90 degrees (horizontally) and used a gear instead of a direct grind mechanism to remove the wobbling effect, then you can add way more tolerance to the burrs mechanisms. Overall very nice product. 👍

Did your opinion go back to the Ode for that? Because in the Timemore 078 video, you mentioned it was that was the best before diminishing returns. Just wondering if your opinion has changed is all.     I know this is confusing, and I should've been more clear in this video: All my testing for the burr set prior to completing it was BEFORE the timemore 078 came out. So, I figured i'd replicate those tests in this video. When testing, ode ssp WAS best before diminishing returns. so, I spoke in the present tense. Didn't realize how confusing that was until after a few of these comments. Timemore with turbos is still my number 1 for filter (before diminishing)

    yeah the 078 is the move if you are filter focused. But, depending on the coffees you drink, the difference could be bigger or smaller. I'd say don't expect earth shattering but you'll definitely notice a difference.

    really boils down to a) obtaining (imo) better tasting coffee while sacrificing ergonomics or b) obtaining better ergonomics and sacrificing a bit of taste. Both fantastic. And tbh you can switch loads of burrs with the ode over time if you accumulate 64mm options.

    Sorry. I should have been more clear. While I was testing for these burrs, the 078 turbo was NOT a thing. At the time, ode ssp was my ceiling for filter. I was just reliving those cuppings. I think 078 turbo is better than ode ssp

    So after watching the full movie, thank you lance for sharing the story of the development. For me it is no issue you are involved. I respect your point of view of not talking about the Pietro grinder to often because of your bias. But for me this doesn't matter. You always seem to be approaching this as objective as possible. In your video you state that the ode gen 2 with ssp burrs is the best for filter before diminishing returns, is that already taken into account the sculptors 64 and 78? (I know the review is coming, but just curious if the initial testing is already influencing your statements 😉 )

    Sorry- I said in my Timemore video (of the 078 I already bought) that I thought it was the new king of "before diminishing returns." I made this burrset about 2 or 3 months before the 078 was released. So, I was testing it against the ode with ssp. So, that was the comparison I included. I have not done heads up against the timemore 078, but the zp6 is quite close to the 078 turbos.

    I now always prefer Pro Brew to Ode SSP. I'm at 80/20 for Pro brew vs ZP6. I less consider the coffee being used and more consider the style cup I want. Do I want full flavor separation or some blended elements? I also consider the mouth feel they both cater.

    I have one with the pro brew burrs. It really taste good! Very clear and clean. The best filter ive tasted in my whole journey of learning and drinking coffee. A question I would like to ask Lance is, how do I remove the pin to make it stepless? I cant seem to unscrew. It gets stuck at around almost 9-0. From your video, you are able to unscrew it past that 😅
