I bake homemade bread!
Everything is very simple, useful and tasty!
For Turkish Ekmek bread we need:
Warm water - 350 ml.
Active dry yeast - 7-10 g.
Sugar - 5g.
Mix well and leave on for 5 minutes.
Bread wheat flour 400 g .
Add salt 5 g.
Mix well.
Add yeast mixture.
Mix well.
Add olive oil - 30 ml.
Mix.
At this stage, add another 100 g of flour.
Mix well in a bowl.
Cover the dough and let it rise in a warm place for 1 hour.
The dough should look like mine.
Sprinkle the table with flour.
Put the dough on the table.
Roll up the dough as I show.
To prevent the dough from sticking, you can sprinkle it with some flour.
Divide the dough into 2 parts.
Fold each piece of dough and shape into a ball.
Cover and leave on the table for 15-20 minutes.

Place the bread on a baking sheet lined with parchment paper.
Cover and set in a warm place for 15 minutes.
Lubricate the dough with water.
Sprinkle the dough with cornmeal.
Make an incision in the dough with a knife.
Bake at 220°C for 25-35 minutes.

    As an American boy living in Turkey during the 70’s I was tasked with going to the bakery to pick up a loaf of ekmek for our breakfast. The bakery was not one with pastry cases. It was industrial in that it was a large dark room that housed the oven. The bakers would work only bread and they seem to enjoy me coming down to pick it up right out of the oven. I have not been back to this magical country but have decided to go back this fall. I google mapped Izmir today and Holy Jesus it has grown! I consider those years some of the best of my life. I was so aware of how special this experience was that when the plane lifted off in Istanbul for America tears were streaming down my 15 year old face. Still brings tears now when I recount and feel that feeling again. Nothing like hot ekmek with butter and jam! Oh, and the meals that went along with this bread…..

    I worked in Turkey for a year and had this bread on several occasions. I will be using this recipe at home in Canada delicious bread thank you for sharing I recommend everyone try this. 👍👍

    I used to eat this bread a lot when I was stationed in Ankara, Turkey during the mid 1960s with the US Army. In those days you could buy this bread just about anywhere even on the streets for less than 10 cents a loaf. They used to haul it around in dump trucks [they were open bed trucks] in those days to deliver it to stores. It was not wrapped. I would see a dump truck load of it driving down a street with a guy sitting up on top of it to unload it I guess. Doctors used to recommend it to mothers who kids were skinny or would not eat as a health food. Of course times have changed a lot in Turkey since those days.

    It looks divine-so good I can almost smell it. You make it all look so easy but I know it's not, so I mostly stick to bread baked in a loaf pan.

    Olá!! Este pão é delicioso. Minha família adorou. Quando morava no Brasil 🇧🇷, toda semana tinha um tipo de pão. Mudei para o Japão e deixei de fazer pão. Vendo suas receitas voltei a colocar a mão na massa. Como é bom ter um pão quentinho para a família.
