INGREDIENTS
for a 20 cm mold
MASS
4 eggs
120 gr sugar
Zest of the peel of a lemon
120 gr 0000 or all-purpose flour
SYRUP
60 gr sugar
60ml water
Lemon peel
BLUEBERRY JAM
200 g blueberries
60 gr sugar
1 tbsp lemon juice
BLUEBERRY CREAM
85 g of crushed blueberry jam
600 ml heavy cream or whipping cream
*Test the cream once integrated and before reaching firm peaks to see if the sweetness is to your liking, otherwise you can add sugar.
Extra blueberries to decorate, amount necessary
Oven at 180ºC for 25 to 30 minutes, check if it comes out clean when you poke it with a toothpick.
