I can't believe I've never made Chicken Parm like this

Today we're making chicken parm with vodka sauce. Well seasoned crispy chicken cutlets are baked with vodka sauce, mozzarella, and a sprinkle of Pecorino. Use Parmigiano if you want but I think Pecorino is better. Enjoy!

    Keep doing what you're doing! One tip for future videos, maybe add some text on the screen with your ingredients (with metric / imperials) - other than that, keep it up! For views, maybe alternate and do series (eg. vegetarian, or regional Italian styles). All the best for you.

    I totally agree with your comment about cooking not being the same as baking. Exact measurements are important in baking, but to be a good cook, you have to develop instincts over time, and taste what you are cooking constantly, and make adjustments based on your acquired instincts. Being a good cook is a journey, not a destination. A good cook NEVER stops learning.

    Here’s a tip from my 80 year old Neapolitan friend regarding chicken cutlets. Put your cheese in the beaten eggs. It helps it bloom. Small changes make a big difference.

    Many cooking channels are competing with each other to make things overly complicated. I think there is a couple of reasons for this. They want complements from pro chefs/peers and maybe they think simple food doesn't offer them enough of a challenge. I try to put the viewer first on this channel and cater to what they would actually attempt to make with the limited time we all have. I try to do that in the simplest way possible.

    It is one of the best stovetop dishes channels. I love cooking and I'm a die hard grilling guy .. I'm sure you already know but malcolm on (How To Bbq Right) is the go to if you want to grill some amazing meals.. he's the goat imo.

    Agreed. This kind of stuff is what I generally cook because I rarely want to dirty every pan, utensil, and dish in my kitchen and spend 8 hours making a meal and cleaning up. If I want fancy, there are great restaurants nearby, so unless it’s a special occasion, this is what I’m making in my home.

    "I believe that making exact measurements when you're cooking is going to do a couple things. It's going to make to make you not a good cook; you're never going to learn how to cook. This isn't baking." -- Jim, of Sip and Feast. This is one of the truest statements anyone desiring to cook well needs to understand, and why a gold YT play button is on the horizon. Learning how to cook instead of learning how to measure is the foundation of your channel, regardless of the recipe, whether Italian or more American leaning. Folks are coming here to learn how to actually cook, and cook with using what they have and can get. Baking is more precise so get a scale, but good cooking is all about the groove and feel. In never saw my mom or grandma sweat the details or have anyone dislike whatever they made. Just like all great musicians occasionally hit bad notes when performing, great cooks also have their moments. What makes both great is how they handle and recover from it, which comes from doing either of them a lot. It's called experience, and our confidence grows to becomes a place where we realize that there isn't much we can do wrong that would prevent us from still making something others will want to consume.

    This time 1000x. In addition, NOT measuring encourages experimentation. It encourages you to taste and adjust as you go. It encourages you to take note of your outcomes and make adjustments next time. Eventually those types of learnings allow you to make up your own recipes, or modify other recipes you might find in successful ways.

    @@zhan04144 Right! I've seen recipe blogs where commenters say "this was bland, never making it again," and I always wonder, don't they taste as they cook? It's so easy to fix if it's bland, or if you don't like one ingredient, leave it out or try something else! Experiment!

    Def. can make it to a million. I don't know, your videos really have a different aspect to it much different from other channels. I guess if I'm going to have to say something, it'd be that you really seem genuine. Genuine about food, genuine about teaching people, and genuine with the family. I don't feel like you're "selling" me anything. Oh and lastly of course, it's refreshing to see you bond with your kid. And it's not the kind that "exploits" their kinds on youtube... and is a genuine connection for your guys' love of food. Cheers man. Oh and most DEFINITELY one of the good aspects of the channel, is how well the video is made, from how it's shot, and how it's edited. Simple but top-notch.

    I have to tell you how much I enjoy your show. All around great show and a great watch. Your son is the best! I have a 7 & 11 year old girls. I cook almost every night. Have a hard time getting them to eat anything outside of crab legs, steak and ravioli. Your son is an inspiration! Reminds me of when my brother and I would fight over the last piece of food!     Again, the best part is your kids. They are amazing. Your son knows good food. I have been trained 3 times as a flavor panelist and I’d take James’s reaction as a better measure than 99% of the panelists I’ve worked with.

    This sauce is so versatile and a good change from the usual Italian sauces. It was superb on the chicken parmigiana. I also made this sauce with fresh shrimps as suggested by Jim which was fabulous over pasta. Always looking for different ways to use shrimp in recipes. The silky texture is so delicious. I really enjoyed dipping toasted Italian bread in the sauce too. Thanks Jim for this different delicious versatile sauce! 5⭐’s

    Honestly probably one of the best cooking channels there is. The videos all feel very relaxed, very homey, and all the recipes actually seem achievable. A lot of other channels have recipes that need niche ingredients or are overly complicated. Keep up the good work!

    Hey there. Just thought I would swing by and say: I made this yesterday in my tiny kitchen, and it tasted amazing. I've never made Chicken Parm before - it's not really a thing here in Denmark where I live - and it was great fun to make. I even lacked some ingredients but that didn't stop me. Your channel taught me to just have fun with it and the dish still tasted great despite having to use red wine instead of white, and having no cream either. So thank you very much once again for sharing these videos. It inspires me to cook and has already given me so much great food I would otherwise never make. Cheers!

    You are just amazing. I started watching your videos while I was undergoing treatment for throat cancer and found your New York round video. I ordered the steel and did the whole 9 yards seasoning it etc. And even though I can’t eat yet from my treatment, I have been making pizza and chicken parm for my family and have been loving watching them enjoy it.     I’ve been following for a few months now and I always knew your channel was gonna make it, because you are a very relatable guy and your approach to cooking has a certain laid back feel to it that you are able to connect with your audience. Not to mention the delicious recipes you make. I pretty much love all of it, although my personal favorite was the New York style pizza. I’m actually prepping a pizza steel to make it.     I watch your videos for the menu ideas and ease of ingredients , but listen for the stress free approach to completing a delicious dish...I usually watch a few in a row and always find a "new" approach to my standard methods...like adding onions and cheese to the marinate for your chicken and potatoes...well deserved you tube recognition
