He is using a gas fire which isn't too powerful, also his wok is carbon steel and not cast iron. I think he spent time to perfect his process to get wok hei! A hawker once told me that when you fry it is better for the koay teow to fall flat on the pan for maximum flavour. That one takes skill also

What makes Penang char koay teow so good? Cant find good ones in KL. Maybe not looking hard enough. But Penang CKT....se bei ho chak ohhhhh

yes there is, I see it often on Indian stall menu. Or you can just order the drink from the coffee stalls. They sell kopi/tea/milo definitely can mix them up lol. Like yuan yang, not stated on menu you still can order them. I remembered my first taste of coffee as a kid, was my mom mixing my milo with kopi at a hawker centre.
Any CKT stalls in Penang is good, rating not less than 8/10 compare with other places, same as Klang BKT...reason is stiff competition, if not good close shop.. in anything, competition bring out the best.
