2 cans of tuna
2 eggs
small piece of fresh ginger root
Handful of Parsley
Chives
Zest of 1 lemon
1/2 tsp chili powder or add 1 fresh chili pepper if you have one ;)
Salt (only if tuna unsalted)
black pepper
Oil for frying
Fry over medium heat for 2 minutes on each side
For the dipping sauce:
2 tbsp mayonnaise
1 tsp hot sauce

Place in the oven at 190°C / 400 °F to cook au gratin and in less than 5 minutes it'll be ready!

When I use canned tuna, I drain the salty water off, then I put tuna in my small colander, and hold it under the faucet with the cold water running over it. That gets rid of the salty water, & the heavy fishy canned taste. Then, I squeeze out the water with the back/bottom of the tuna can. I use only the solid white fish Albacore Tuna because of the mild taste. I also make a tuna loaf and bake a potato in the oven at the same time. Use the same ingredients as used for a salmon loaf. I use 3/4 cans of tuna for the loaf.
