Testing out the Vortex Plate from Hunsaker Smokers.
In this test I'm using 2 Weber Smokey Mountains and I'll be hanging 3 racks of ribs in each. I'll be hanging one dead center and 2 on the sides to observe any serious temperature changes.
I'll be using Kingsford Blue Original.

    Great video, I wish I had the 22.5 WSM instead of my 18. I cooked some Sunday using a fire dial for the 1st time. I took the ribs off at 3 hours & wrapped them in foil, but I finished them in the oven. The dial kept my temps down around 215-220 as compared to 250 where it normally runs w/o the dial. Since the ribs hang closer to the fire w the 18” the dial is a plus...have a great summer!

    You do such nice comparison cooks. Start to finish nice video. Something to be said for having a heat diffuser and a little protection of ribs dropping. I like heavy duty metal too. Priced right. I've yet to try the Heath Riles rubs. That was nice color and no sauce too. Great job Ruben.

    Great comparison video big homie! I think what it comes down to is the right tool for the job. With ribs, I feel you benefit from hanging directly over the coals. Like your wife alluded to it adds an additional flavor component. The Vortex would be better on long slow cooks. For instance, pastrami where you need to cook longer to get tender but you want to avoid burning the rub (at all cost. been there done that!)

    Mad Swine Backyard Barbecue, thanks for doing this. I just discovered you, and I’m impressed. It’s obvious you know what you’re talking about w/o a lot of BS. Just the fun kind! Right on time for me too. I’ve been researching (obsessively) different kinds of smokers to finally have one. I decided to build a UDS myself. I can build one for under the price of WSM 22”. Nothing against Weber. I own a copper kettle. Love it. It’s been a fun project. Curious about the Hunsaker Vortex Plate System, so your test/review was helpful.

    Thanks for the excellent reply, I will be doing 12 on my WSM 22”. Getting the same set up with the vortex plate 2 additional questions. Do you recommend the same amount of charcoal for that cook as you did here. Second question I almost burned my face with an epic fireball opening the door on my smoker basically after years off cooking I lacked on common sense my worry is cooking that many ribs hanging on the outside of the hunsaker ring allow drippings to pool underneath? I saw the video you did 20 racks in one go any grease issues or at the bottom of bowl?

    So I would definitely go on the safe side and add enough unlit coals to touch against the charcoal ring. That plus a 3/4 filled Chimney of lit coals should be enough. I didn't have any issues with the grease. That's why using the minion method, lit coals at the center and hanging the ribs on the outer ring of the Hunsaker Hanger works out perfectly. Now I've never used the Hunsaker Vortex Plate when smoking that many ribs at once so I don't know if the grease can stay pooled on the metal fins causing a grease fire. I typically just put another grill grate right on top of the charcoal ring to catch any ribs that fall. I let the grease drip directly into the coals. Let me know how it goes Jorge.     Nice vid. So I actually have done the same test...side by side like this. The flavor without the plate (over coals) to me is a little more pronounced. The vortex plate makes that flavor a little more subtle. Some find the drippings on the coals flavor a little overpowering...some really enjoy it. I pretty much use the vortex plate all the time now for my WSM's. It's a great product.

    It is a great diffuser. I do however love the flavor given by the drippings, so for me it isn't used much in the WSM. HOWEVER, if you see my 2 latest videos I've found a new home for the Vortex inside my Weber Jumbo Joe! Best $33 spent!😎👍

    One observation man, you said the ones on the right were the vortex, but actually I believe watching you use that light colored wood board for the ones with no vortex

    Smoker on the left = no vortex. Smoker on right= vortex. Look how I place the ribs on the right on the cutting board that has the track that catches juices. Only one cutting board has that. That’s the Vortex ribs and you’ll see those are also on the right when I’m showing the finished product.

    @@HeavyMetalBarBQue Man, I'm already impressed and all I've done was bake the pizza pan in the 26" to remove all impurities. I used the charcoal grate from the 22" WSM, the fire ring, a full chimney of lit charcoal, loaded the modded pizza pan and added the standard 26" grill grate. I also loaded 2 new charcoal grates and the Vortex Plate to join in the bake on top of the grill grate. Vents wide open I let it do its thing. Temp at the exhaust was 420°F for the next 2 hours and I ended up leaving to run some errands. Im not sure how long it actually lasted but I came back about 4 hours later and everything was cool to touch. The part that has impressed me is when I removed the pan there was no temperature discoloration ANYWHERE on the pan! 😳 Not even on the side closest to the coals! Is that normal? Of course I have pictures of all this that I'll include on my first actual test video. I ordered 5 CDN oven gauges to place all around the grate for my first test. As soon as i receive them it's on!

    I purchased the Hunsaker vortex plate and the hanger in December 2019 to use my 22” WSM for hanging ribs, chicken, etc. I have not used it yet, but my first concern is that it will be difficult to add charcoal or wood chunks once you are cooking and I am worried that my ribs will fall off the hooks and burn on the plate. (We like our ribs fall off the bone) Do you have any tips to prevent them from falling. I also bought the firedial which goes in place of the water pan, it worked good on a rotisserie turkey, but there is not enough clearance for hanging meats, especially ribs. If I remember correctly the hanger does not fit on the rotisserie riser to give me more clearance to hang meats using the firedial. Also, I agree the Hunsaker products are very well made.

    Great questions! 👍 You won't hafta worry about feeding any wood or charcoal if you make sure you apply enough from the start. Those 22" WSM's are great at going pass 12hrs with a single load of charcoal when utilizing the "minion method". When smoking ribs/chicken/turkey you won't need a full load of charcoal. The amount I used in this video was actually a perfect amount. Was only a small amount of charcoal leftover. 3 or 4 fist size wood chunks are sufficient for smoke. To prevent ribs from falling onto the Vortex Plate you can double hook'em. Start with a hook under the 2nd rib and then link another hook off that first hook. So you'll end up hanging off the 2nd and 4th/5th rib. I usually start checking for ribs that have fallen after the 2hour mark. Then I check every 15 minutes. However, just because they've fallen off that particular hook doesn't mean they're done! As for the firedial , I just don't think its neccessary. Your water pan makes for a good diffuser. Watch my "Brisket hung on Weber Smokey Mountain" video to see my setup and I think it would work for ribs. Im also using 3 hooks linked on that video so you can reference what I was saying earlier.     Amazing. Just one question. The non-Vortex approach - did you use the water pan? Heard about people putting sand into the water pan. Any experience with this? Thanks and happy Thanksgiving.

    Hi Michael. No water pans were used in this test. The non-vortex ribs were directly over the coals. I also have heard about people using sand in the water pan. I've never tried it. I think the water pan works great as is. Thank you for watching and have a safe Thanksgiving! ✌😎👍

    Usually I don't. At the 2 hour mark is when I usually start checking up on them every 10/15 minutes because this is when I've noticed they start to fall off the hooks, especially since I didn't double hook them. However on this day something came up inside the house that I knew I wasn't going to be able to baby them so I let them finish on the grate. 2 hours of drippings into coals would have been enough to see if there's a difference between the two.

    I get how it can look that way. It takes these kind of experiments to determine best practices or best preferences. Some of us have already mastered the art of producing great flavored product but sometimes finding out if one method is superior to another is just as important.
