HUGE Butchers knife restoration and sharpening - Antique kitchen knife
Huge Butchers knife restoration and machine sharpening. Today I do a cool restoration of an antique kitchen knife from an old local butcher in Italy. The knife is huge and should be around 100 years old.
I bought the knife on an antique market in Italy this summer. The knife was the old local butchers’ knife and I was so lucky to buy it for 30 euro. The knife is really huge, solid and measure almost 19” inches or 47 centimeters. The width of the knife blade is 2.5 inch/6.3 cm wide.
In this restoration I will reuse the old knife handle despite that it has some deep scratches and broke apart when I was drilling bigger holes for the pins. I manage to fix the handle with some strong epoxy glue.
I use electrolysis to remove the rust from the knife blade and did some fine grinding with a grid 320 cleaning flap disc (No deep grinding). I polished the blade by hand and with my polishing machine to achieve an almost mirror blank knife blade.
I ’d make some custom pins of aluminium and brass to attach the knife blade to the handle. This part involved some simple lathe work. I hope that you like that little extra touch. I also do a proper knife sharpening on my new sharpening machine Tormek T4.
This restoration video is a bit different from my other videos, because I have a little more speed in the edit, and I’ve added some music to it too. I will in future videos try to do different edits so YOU as viewer and ME as a video creator get variations and different experiences week after week. I really hope that you appreciate these variations.

I admire your tenacity in keeping and fixing the knife handle. Sometimes the, "I make a new one" approach is cool, but I much prefer the, "Let's fix the old and make it new again" angle. Well done, mate.

I agree. In most knife restoration videos the first thing they do is make a new handle. It's refreshing to see someone save the original.

I like that he kept the spirit of the 100yr old knife intact by using the old handle, but personally i would've gone ahead and replaced it with a micarta handle as it would be less susceptible to damage due to water/moisture. Overall well done!

Done correctly! Preserved the factory heat treatment, saved the original scales and preserved the knife's overall character. If it were mine, I'd have been very happy with that restoration. I've seen several antique knives ruined because the maker can't help but to screw with the factory HT or completely re-profile the entire knife to something that doesn't remotely resemble the original. Leave it alone!! Preserve the history!! Well done sir!

I liked the resto vey much, however this knife is a dime a dozen. Had he done something radical no great loss to the history of CHEFS knifes. This wasn't Auguste Escoffier's personal knife, museums and archeologists aren't clambering at his door to see this knife.
I love that you tried to preserve the original state of it. That‘s a true restoration for me and not what others on KZread do

I'm so happy the handle got to stay. This is a knife I would love to own! I am sorry that there's a GAZILLION complaints about the music...😕 If the public REALLY APPRECIATED your hard , time consuming, loyal, and beautiful craftsmanship, the music or lack of, or what kind, SHOULDN'T MATTER !!! This reminds me a lot of the HUGE carving/butcher knife my mother had in her kitchen when I was a kid. 👍

I find it odd, that every item that's restored on this channel, has a very distinct rust. The rust that these items have does not look old at all. I'm not an expert but I find that very odd.

Couldn't help thinking exactly the same thing. The original handle and rivets looked way too good for an old and well used knife.
