The love for the children you serve is wonderful. I am a retired special education and elementary teacher of 35 years. We have no idea what our children are dealing with daily. My advice to young teachers is to remember that each child is someone’s baby and to try to see something special about each one.

My family was a family of teachers,my momma was a secretary to a judge, but several of my aunts and uncles were teachers,or principals etc.,l like your suggestion to find something special about each child, yes each one is someone's baby,l know it's difficult to remember that sometimes, they are under so much in today's world.

My mother-in-law’s husband grew silver queen corn and my husband and I spent two weekends in a row at their house making cream corn. My son wound break it, my husband would shuck it, my mother-in-law would silk it and I would cut it off. Three very thin layers from the top and then scrape the milk. That corn was so wonderful!

When my daddy was alive, I had to take over putting up corn from mama and I always dreaded doing it. He shucked it and I cut it off the cob. Usually about 100 pints and 100 quarts a year for us and family/friends. I lost him last year and now would do anything to have him back to do corn again. Same with digging new potatoes! Was anybody like us and tried to cool our large pots of corn off in a clean bathtub? Sending love from Ayden, North Carolina.

My mom used to collect cookbooks and when she passed, I found some real old ones, which I brought with me. Some even had her own recipes in, from church, etc., when they would make special cookbooks for sale. I have her old recipe box and her old apron from the 50's. I love your little corner.

Sharing my method for Mr. Brown. My stepdad taught me a trick for preparing corn. He had a big stump in the backyard that we used to chop off the corn ends. He used a machete. Then he would shuck the corn quickly since the ends were off. To remove the silks, he used his air compressor. Blowing from the end of the corn cobbs, the air would separate the individual kernels and the silks would just fly off. (That's always the hard part!) He also had a big water-filled stainless pot on his turkey fryer. We would add the corn cobs and boil for 3 minutes. When that was done, we transferred them to a large Igloo cooler with ice water to stop the cooking. We cooled the corn for 5 minutes. From there it went to the kitchen table to cool and drain on towels before either packaging whole for freezing or cut the corn off for cream corn. I remember processing 20-30 dozen ears before noon with two of us processing the ears. The air compressor was the key. I remember silking corn till I was sick of it. No more! The family cattle liked the shucks too. Nothing wasted.

1 - 20oz tube of frozen creamed corn(granny always used white corn but you can use yellow, it’s sweeter) 1 stick of oleo (margarine) or butter. (I use 1/2 a stick of butter) Salt and pepper to taste. I use my granny’s 8 inch iron skillet. Place the iron skillet with oleo/butter in cold oven, set at 375 degrees. Peal off packaging on frozen creamed corn set aside. By the time oven is ready your skillet will be hot. Put frozen creamed corn in skillet and put back in oven. I take it out about every 10-15 minutes to stir and scrape the thawed corn off the roll, scrape the sides and bottom, put it back in the oven. When the corn is completely thawed add salt and pepper. The longer it cooks the thicker it becomes. Scraping the sides and bottom will get the “crispies” mixed back into the dish. It usually takes 45 mins to an hour, sometimes a little longer depending on your oven. Check it often so it doesn’t burn. This is labor intensive just warning you. You can make this on the stove top it just won’t get really gooey and crispy, but still good. I’ve made it both ways. I get my rolls of creamed corn at Walmart in the freezer section. If you cut your own corn use a quart of creamed corn with the juice. Y’all that cut your own know what I’m talking about. 🤪

Like you, I LOVE cookbooks. I have my mothers and my grandmothers. They are my love link to my past with them. Neither one was a great cook but, they cooked with what they had and adjusted. I’ve collected useful and useless books over the years. My only criteria was…pictures. Pictures are a must. I don’t think my 3 sons will want most of them. My absolute favorite is one that my 43 year old son made me when he was in 3rd grade. His recipes are from his heart and make me laugh. Thank you for sharing…I so appreciate it! P.S. I have a cookbook I believe it’s titled “Recipes from the Bible.” Incredible.

I just finished watching this on my TV. I can't comment there but I really enjoy your videos. I thought I'd share that since being on disability I started collecting cook books starting with my Grandmother's and my Mom's. My very favorite is is the Fannie Mae book from the 50's that I bought for. 25 cents when I was stationed in Germany. It also came from a thrift store! Thank you for sharing!

July 8, 2024--thank you for sharing this recipe for creamed corn. Our local Meijer store had corn for 12¢ an ear!!! It was wonderful corn, too! I was able to freeze 80 ears, 40 of which I creamed like you did, except I sauté it on top of the stove, bag it and place in ice water, then to the freezer....we went to Westside Market in Cleveland, Ohio 2 weeks ago and vendors wanted $10 a doz.!!! Of course, I did not buy any. I have saved so much money by doing it with Meijer's corn: Cleveland prices I saved $57; local farmer's market, a doz. is going for $6 a doz., so I saved $30.40!!! I thank God we were able to get such a deal in these hard times. My husband and I are retired and, of course, every penny counts! May God bless you in your new adventures of both being retired. My husband and I watch you and enjoy both of you sharing your lives. We consider you as our extended family in Christ!!!! Take care! Love, Sheila & Chuck.

YEARS AGO MY GRANDPARENTS, MY MOM AND DAD AND MY SIBLINGS USED TO TAKE A WHOLE DAY TO FREEZE CORN 🌽 . WE DID IT OUTSIDE ON A HUGE PICNIC TABLE, I WAS TOO HOT TO DO IT IN SIDE SINCE WE DIDN'T HAVE AIR CONDITIONING 😅. WE USED CUT DOWN MILK CARTONS TO FREEZE IT I IN AND USED FREEZER TAPE TO CLOSE IT UP! THE GOOD OLD DAYS WERE SOO MUCH WORK BUT BETTER IN MOST WAYS.

My mom froze the best cream corn. She only added salt and a little extra water if needed. No sugar or cream was ever added. It was always a sweet yellow corn. She used to try to freeze 100 qt bags of corn yearly. The whole family pitched in to process the pickup load of corn picked that morning. It was fun day and sometimes a long day. She cooked it off in big enamel dishpans on top of her gas stove. So many batches were cooked. Sure do miss my mama’s corn,

I grew up on a farm in the Deep South and we grew silver queen corn, among many other vegetables. We always froze it. We never canned it or any other vegetables. Everything we put up was frozen except for pickles, relishes, preserves, jams, and jellies. I completely agree that frozen tastes much better. I love creamed corn the old fashioned way, not the newer recipes that add stuff like cream cheese or mayonnaise to cover up the fact they didn’t have fresh corn with the cream scraped out, we used a wooden board that had a metal blade that cut the corn off and then we’d scrape it again with the back of a knife usually, to make sure to get all the cream. When you talked about dinners of creamed corn and fried okra, I said and tomatoes before you did, lol! Shows you we both grew up eating the same things! ❤️😀❤️

My 3rd comment! So sorry. I will be quiet after this. 😂 I love my air fryer - my favorite things to make are quick meals with chicken and vegetables, like squash, peppers and onions plus whatever seasoning you like. It’s a one dish meal. Also onions, summer sausage and potato chunks. So quick and easy after work. Most of my recipes are from Cathy Yoder At Empowered Cooks. Shes a Mom of 8 and uses her air fryers a lot. I also use my instant pot, but not as often as my air fryer. I always boil eggs in the instant pot. They peel perfectly every single time. 🥚
