How strong opponents does this work against? I have been playing chess for around 1 month and I am 1000 elo on chess.com. Do you think I could win blitz games by using this gambit?

The Queens Gambit works all the way up to Grandmaster level so you're fine with this opening. These tricks are generally more useful at lower levels of course but I think around 1000 should be fine:)

I believe that for beginner level it's easier to win with d4 than e4, because lots of beginner opponents go for ...d5 without having any knowledge about the position (and these traps), whereas against e4 there are more openings they play, such as Philidor, Sicilian, Scandinavian, etc...

on 1000 elo it'll surely work. Even if you play classical chess.
