The knot question is a valid one. I find that especially with thicker or bulky yarns, that little worm end that was cut and left loose always comes peeking out the right side. I had a friend who wouldn't wear the sweater I made her because she saw that and thought it was all coming unraveled! Comment?

Why don't you knot the yarn anywhere - Either at the point where the 2 yarns meet, or at the yarn ends?

Great question, Bonnie! The simple answer is two-fold. 1. Knots can come undone. 2. Knots produce lumps which can be uncomfortable and/or unsightly on your finished garment. Weaving in your ends produces a flat, invisible finish with little or no distortion to the fabric. If the end pops out from under one of the horizontal strands, it's no big deal. With this technique, you've gone under multiple strands, and the join is secure. If you tie a knot and it comes undone, you have no length on the tail end to be able to repair it. Every once in a while with a very slippery or rope-like yarn I may use the Magic Knot technique for joining, but only because the yarn is recalcitrant. It is always my preference to weave ends in rather than knot. Hope this is helpful. That said, you can do whatever you like, because you're the boss of your own knitting. Just don't tell me, okay?! :-)
