How to Wash Pig's Stomach (hog maw) How to clean pig innards? How to remove smell from pig stomach

This is a prelude to our other video on How to prepare Pig's Stomach with White Pepper Soup. There are many ways to clean up the pig's stomach but we found these 3 ways to be the most efficient, leaving the pig's stomach odourless, thus yummy to consume. When cleaning pig's stomach, we recommend you to use all 3 of these steps in conjunction.
If you find these steps too troublesome, fret not, you can ask your neighbourhood market if they sell cleaned pig's stomach. You can also go to Sheng Shiong or NTUC, sometimes they sell cleaned ones and cut up in small pieces.

    My mum used to clean it for me to cook. I never did learn from her but I know she used a full huge package of salt to clean as well as the hot wok treatment. I’m glad to see Roland going thru the works and can see its very very clean - and heaps of thank you for this!

    Cleaning the stomach is no joke. I wash it at least 10 times with vinegar, salt, water, baking soda, lime, and cooking wine...and then in hot water😭never again!

    To prepare pigs maw thoroughly clean with no smell takes time & effort. Can always do a few & freeze for later use, save so much time. Good work. 👍🏼

    Wry informative video. Thanks Roland! My method step 1 : use newspaper to wipe the slime off the inner lining. Step 2: wash with cornstarch. Step 3: Heat pan with lotsa coarse salt and roll it around as per video. Now I know a new way to use up my recycled oil. 😀

    Here’s my method. I put the maws in a bowl with water, 1 cup of vinegar and a few table spoons of vinegar. I let sit for 30 minutes, drain and repeat the same steps 3 or 4 times. Also, it makes absolutely no sense to not cut them open in the beginning. Think about it guys, you have to boil these thangs 4 hours for tenderness, so all these steps make no sense.

    Infact it does. Boiling kills germs not the smell though..it is basically boiling in the smell..like boiling herbs together with it. Add another method after cleaning..boil for awhile, drain the water and rinse a bit more before finally ready for cooking it the way you want. There is no need to apply the heating with wok when you do this but if you want to..boiling is the last step.

    I know right i am from Georgia we don't go through this process of cleaning hogmaws but it depends on where you are from. But some good eating.

    Are all three methods needed to clean or just pick one? I get them clean already, except for the trimming off fats from inside. I do blanch them in a pot of water with leeks/onion , ginger, garlic and rice wine. I just finished stuffing two with glutinous rice with lotus, dried scallops and hong ma bits.

    We split them open and we wash and scrub those maws . .its alot of work but they are delicious if cleaned and cooked properly. If you are around someone cooking maws and they are stinking don't eat them..just means they were not cleaned thoroughly 👍

    Put it in a washing machine and add salt in and then go to watch Tom and Jerry. When go back to see yeahhh I am done!! , Okay I go the the restaurant near by and eat fish soup instead. That's all. this is how I wash the pig stomuch.

    Given how long you're cooking the pig stomach in the wok and on both sides, wouldn't the pig stomach end up being fully cooked by then?

    Hi Mangoekiwi. It’s okay if they are fully cooked. Most importantly, they cannot be smelly otherwise it will spoil the whole dish. Happy cooking!

    You have to cut them up, put them in a pot with a little vinegar, hot sauce and onions. Let it cook until tender.

    I just bought a small package of these….first time I’ve had some in about 50 years, as we don’t consume pork in my house, but I saw them in the store and wanted to taste them again. After seeing this video, I’m afraid to eat them. I think I’ll probably trash them. 😦

    I'm wondering, it might be possible to eat them even if they are not perfect. That's what I did with beef kidneys. I could still smell it, but I ate them anyway, and it didn't hurt me. Maybe pig stomach is the same way. It may take some courage and it may not be easy to do, but not dangerous.

O.O I'm clearly a noob o.O Do you use the stomachs to clean the wok?!? kidding. Thank you for this method, I'd prefer to hear voice hints on the details of this entrails cleaning since I've never seen this before and I'm sure there is more to know, call me OCD if you like but I like to know everything :D . Still, I can clearly see you know where you're going. Is the yellow stuff traces of bile?

    Wow Roland, you really take so much trouble to wash the pig’s stomach. Don’t believe the Hawkers have the time to do that. You should run a restaurant and we can come patronise yours. I love this dish but it does have an off-putting smell
