Can we add bothe hdd and ssd?

I have an Aspire 5, i-5. I installed a 16 GB so-dimm and a 1 TB SATA SSD. I just ordered a new NVME drive to replace the original. Gotta love it. Pretty good for an inexpensive laptop!

Yes you can use any 2.5” hard drive or SSD type drive.

if the little latch that holds the connecter strip breaks is there a way to fix it?

You will probably have to replace the whole cable.

I have Aspire A515-53G. Do I just buy any SDD and I can upgrade it? Or is there like a specific sdd that I have to use? Sorry not very techy.

no. you can only use USB port.

Yes, you can. But as you can see, the original SSD is NVME type, just by the same type to replace it then you will be fine.

Would this work for the acer aspire 5 1515 - 56?

Highly likely. As I assume Aspire 5 series share the same internal design.
