    Hi Emmy: Thank you for this video and for sharing your cake recipe which happens to be vegan. I also want to add here that I think you do a fantastic job of narrating what you're doing in your videos. Perhaps you've not given much thought to this, but when you describe what you are doing, you are including blind/visually impaired viewers in the experience. (Blindness is a very wide spectrum; some people may be able to see the screen if it's large enough, while others may not have any vision at all and relies solely on the audio.) It also clarifies things for those who may just benefit from verbal explanations. These are points that other content creaters can benefit from thinking about, too. It comes naturally to me because I'm a teacher, an accessibility specialist, and also blind myself. Thank you for such great content. I always learn something new from watching all of your videos.

    I wonder how it would taste if you torch it a little bit? My guess is there would be some caramelization considering all the sugar in this. Plus all the accompaniment suggestions sound delicious! 😋

    Naively thought the apples were magically going to turn into buttercream but it’s mostly the work of margarine, sugar, and milk, which are regular components of vegan buttercream.

    Yep, if you’re in a pinch and don’t have gelatine you can also cook apples with other fruit to make jam.

    That looks like it's less sweet than normal icings. I would definitely try this because I really don't like super sweat icing it hurts my stomach. You're always so kind and wonderful in your videos it makes me want to call you mother. Not in a weird way you just remind me of a gentle caring mother and I love that. Help me sleep well at night.

    If you don’t like super sweet icing (American buttercream is notorious for this) but still want something a little more “traditional” try a Swiss merengue buttercream!

    What a kind comment! And if you don't like super sweet frosting/icing, I recommend trying ermine frosting! It's much less cloying than even the less sweet buttercreams.

    With a technique like that, you could make a whole lot more different types of vegan cream. You could probably replace the apple sauce with mashed strawberries or other sorts of fruit. The cornstarch and margarine seem to be ingredients that will actually make it into a cream, so it could be interesting to experiment!

    you dont you could yield better results with apple juice over the sauce, emmy has become a clickbaiter so all she does is find normal recipes or pointless recipes then over hypes them and then it ends up being just some dumb fucking vegan butter frosting with a hint of regurgitated apples

    The original video was in my recommendations as well! I was disappointed when it was actually made with butter/margarine, I was sort of expecting some kind of cool sciency reaction from the pectin in the apple somehow 😆

    It didn't have butter. Just margarine. Vegans don't use butter because it's made with cream.

    You need an emulsion. Maybe can try coconut cream fraction but the coconut flavour might be a bit strong or incompatible with apple. Hmm...

    @@nieiniei I've had success with arrowroot, apple sauce, maple, and a tiny bit of oil. Without the oil it just doesn't stir or set right. Plus it adds a nice gleam that makes the frosting look fresh even the next day.

    This is pretty much the embodiment of the frosting rule that it needs to be 30% fat. After that qualifier is met, you can frosting pretty much anything. Any fat percentage lower than 30% and it won't set up and will just be runny. That's fine if you want to have it just ooze over your thing and have a thin coating and have a particular runny look. It'll give you some frosting taste without, well 30% fat if that's not your thing.

    I think you can cheat a bit and go lower if you are ok without a thick frosting but it definitely needs some oil or it won't set even with pectin or arrowroot. I can get it to set about 4 millimetres high using less than half a tablespoon of oil but if you want thick replica buttercream you definitely need close to 30% fat.

    Emulsion is a wondrous thing!! When I was in culinary school we learned quite a few recipes for creams and frostings that are non dairy. All have the same basic recipe....fats and sugars. It’s amazing how many options this opens up in baking when learning how an emulsion comes together. 😊 I think that’s one of the reasons I went through the pastry program....I love the chemistry of baking!!! 🥰 Second reason, I love baking!!! 💕

    You basically made what we call Buttercreme (buttercream) in Germany. We use a lightly sweeter pudding and soft butter or margerine to make our buttercream. That's why we are often shocked by the amount of icing sugar used in american buttercream 😅 I remember my grandmother making her famous Buttercremetorte with homemade black currant jam between layers of fluffy cake and vanilla buttercream. Her recipe came from a very old Dr. Oetker cookbook.

    Remember! Adding small amounts of purple food dye to yellow frosting will bring it closer to white. Add single drops to hone in on your desired tone!

    IM SO SAVING THIS RECIPE!! I have a friend that has celiac and is lactose intolerant and she always comes to our picnics with her own lunch box but I absolutely love the challenge of being accommodating to people’s allergies. Doing the research and creating something that truly genuinely tastes good to everyone makes me so excited

    Wacky cake is also my favorite chocolate cake recipe (that just so happens to be vegan), as well! I often refer to it as "accidentally vegan" because it's a recipe my grandma uses who is decidedly *not* vegan.

    I'm allergic to dairy also. It's a challenge for sure. I can't even do almond milk or similar because of the thickening agents. What kind of milk substitute can he handle? I'm curious to try it. Thanks.

    I thought it's literally apples turning into cream with a few ingredient and some new technique. But the secret to this are the margarine and the cornstarch, and not so much the apples. I imagine you can thicken a non-dairy milk with a slurry (and add some sugar of course), then whip it with margarine and you got yourself a nice frosting that truly resembles buttercream.

    Yep, you can make a perfect buttercream frosting using margarine/vegetable shortening and pudding made with plant milk. :)

    I’m seeing a lot of “You don’t need applesauce to make vegan buttercream, the applesauce had nothing to do with the reaction.” Buuuuuuttttt... For this specific recipe, applesauce is what not only gives this recipe it’s final texture(thanks to the ratios being adjusted for the pectin), but it makes the frosting tastier, lighter and easier on the stomach. Even if it’s not a magical apple reaction and it DOES require sugars and fats like an ordinary frosting, it’s a very unique recipe and a great spin to rival mediocre or crisco-based buttercreams. Thank you for the video, Emmy!

    I’ve heard a lot of people say the interesting appearance was a result of Emmy’s margarine temperature. Secondly, Emmy doesn’t seem to hint at any graininess during her taste test. >”It has the mouth feel of buttercream, smooth and slick and rich, but it’s not as heavy.”

    Yea, Crisco and sugar is used to make 'frosting'. Margarine is not very far from Crisco. Kinda killed the wow factor for me. Though I suspect it tastes far better than Crisco frosting.

    Ok this is a genuine question and I'm not trying to be difficult: did the recipe really need apple sauce? Couldn't you have made the butter cream using the margarine and dairy-free milk and not have put the apple in? Or does the apple serve a structural purpose?

    It doesn't need apples its just the flavor in Poland we usualy make it with vanilla pudding and ita called pudding cream and it should be smooth

    Emmy just reproduced a recipe of a Russian cooking KZreadr. Her link is in description, the author explains that it is an alternative cream for those that do not want to use eggs or cream in their frosting. Basically a lighter version of frosting. Obviously this is just classic butter or custard cream with substitutions.

    I feel like plant based butter (Earth Balance) would create a smoother result similar to regular buttercream. The fat just seperated here with the cold temperature.

Per the FDA, margarine is a solid or liquid emulsion containing no less than 80 percent fat content, derived from “edible fats and/or oils, or mixtures of these, whose origin is vegetable or rendered animal carcass fats, or any form of oil from a marine species that has been affirmed as GRAS [Generally Recognized As Safe] or listed as a food additive for this use.” In other words, a product labelled margarine is not necessarily a vegan-friendly spread. There are no regulations stating that margarine must be made using vegetable oils, at the exclusion of animal fat and dairy. In fact, some brands of margarine include a blend of both plant and animal-derived ingredients-and even margarine that is 90 percent plant-based might have a non-vegan component in the mix. (Hint: Fat-based spreads can be emulsified using water...or milk.)

    oh so basically you're making an emulsification so you'd need them both to be at the exact same temperature probably at around 65-70° fahrenheit to avoid it being lumpy

My comment was to help those who may not know most margarines contain dairy since this recipe is meant for those who don’t want to consume dairy or eggs but the OP uses margarine and didn’t inform her viewers of this fact. I’ve got people in my family with severe food allergies and I could see someone using this recipe to make something for them without realizing most margarines contains dairy.
