How to Taste Summer | These are Our Three Favourite Elderflower Recipes

Is there anything quite like the sweet scent of elderflower? For us, it truly marks the beginning of summer when this beguiling plant is ready to forage from the towpath. Join us on this week as we forage for elderflower and uncover the secrets of this enchanting plant.
In this video, we’ll show you how to identify elderflower and share some of the intriguing folklore surrounding it.
Once we've gathered our blossoms, we'll head back to our narrowboat kitchen to create three of our favourite elderflower recipes: a refreshing elderflower cordial, an elderflower & lavender Turkish delight, and a unique elderflower-flavoured vinegar.

    Elderflower symbolises Samhain, Halloween. Branches were hung on the door to keep evil spirits away. Flowers were used to heal in ancient times for swellings. As you know all wild plants have a purpose.Back in Roman times the root was used. I have made elderberry wine & it is ok in small amounts.. 😂 Good luck with your allotment😊

    I always enjoy your adventures. This one brought memories from long ago. Grandma Frieda's Elderblossom Wine I was told when I was a child (I'm 78) that this recipe came to America from Germany with my Grandma Frieda's family in 1891 when she was ten years old. Somebody in the family has made a "run" of it almost every year since. I made my last batch, however, in 1987. It makes a pale golden dry wine that mellows to an almost liqueur-like quality in time. Ingredients: 1 qt elderberry blossoms 1 gal boiling water 2 gal cool water 1 lemon, sliced 1 orange, sliced 1 lb raisins 9 lbs sugar (10 lb bag minus 2 1/4 cups) 1 yeast cake Directions: Separate as many of the individual, tiny blossoms from their connecting stems as practical (any remaining stems will give the wine a bitter taste.) This is most time-consuming and will leave a durable nasty yellow-brown stain on your thumb and forefinger if you do not use surgical gloves. Put blossoms, lemon, and orange (in a fermentation sack or nylon panty hose leg) into a container with sugar and pour boiling water over them. Stir to dissolve sugar. Add cool water, stir, and add yeast (Never add the yeast until after the cool water has been added). Let stand, covered, in a warm place for 7 days, remove fermentation sack, and add raisins (in a fermentation sack). Let stand 6 days, remove raisins, and jug in a five gallon carboy fitted with a fermentation lock. When fermentation activity has ceased, I normally stopper the jug and store the wine in a cool dark place.

    Love seeing you forage and cook. Hopefully there will be lots of elderberries too, so you can forage those and make them into a syrup with your raw honey to take in the winter. Especially useful once you’re dealing with all of the bugs children bring home from nursery in a few years time!

    At the very beginning with Jack’s monologue it reminded me of Benedict Cumberbatch’s reading of Ode to a Nightingale. Your accent is so lovely, you should do audio books! Always love your videos spending a little time watching the 3 of you is always so relaxing. The recipes are always interesting! I feel like I have to make this Turkish Delight, I love lavender. Cheers! Edit: I feel guilty I forgot about Milly when I said the 3 of you, she is always a bright spot in the videos. I shared with my sister because she loves a good dressing recipe.     Hi there I made cordial this year my own version added some rose petals to part of the batch looks so pretty but tastes of elderflower my mother used to make it almost every year ❤ delicious it is summer in a bottle and I have dried lots to infuse in honey in the winter which will be a new thing this year for me recommended by a fellow forager! Loving your vlogs and Tilley chewing flower pots my border terrier used to do the same thing!

    Another great video, I enjoy seeing the things you make, I did the cous beetroot salad you made a week or so ago, it was lovely I didn't put the tarragon in it I used rocket, it was so fresh. The Turkish delight looked lovely it's my favourite anyway, wish I could of tasted it! More food vlogs please 😊x

    Wonderful recipes. Elderflower really is such a wonderful flower. I use a slightly different recipe, that was given to me by a friend. However, i am going to try your recipe for a comparison. How long does your cordial last for, when stored? Happy days xx
