Packing that many cut ripped plantain in a zip locked bags makes it difficult to thaw when it's time to use. Instead, place the cut pieces on a tray, keep in the freezer for an hour or two before putting them in freezer bags to prevent them from sticking. Thawing is easier. You may do same with raw yam. For preservation, cut, peel, wash, wipe off excess water on individual slices and store in freezer bag, let out as much air from the bag as possible. They'll stay fresh for months. Each time you need to cook, take out slices, cook in hot or boiling water, once the water returns to boiling, you may reduce the heat to prevent yam from falling apart. Enjoy your meal

I use to use this method and I always hate what they look like when I try them. Better to fry them first and store in a disposable bowl that u can just take out of the freezer when u need it. It's better to not allow them to be very ripe before frying inorder to maintain its firmness

Tips: arrange the sliced plantains on a parchment lined tray then flash-freeze them for about 2 hours before transferring them into a zip lock bag. That way, the slices won't stick together.
