the bar has gotten so low. you are so right about that
I care for my clients wholeheartedly but they end up taking advantage of my sincere interest: delay paying, cancel appointments, demand free services, try to trick my system to avoid paying. Eventually I waste time and energy and have to turn them down because they basically take advantage of me. Im in education at very high level of competence, I offer tuition. Suggestions?

Move to a 100% cash upfront before service is provided. It solves most of those problems. No exceptions. No 50% upfront. 100% upfront. You are a service provider, not a money collection agency. I switched to that about 9 years ago and it toally changes the work quality and client relationship.
