How to Spiralize & Freeze Zucchini Noodles (Zoodles)

Making (spiralizing) & freezing zucchini noodles (zoodles) is a great way to enjoy zucchini from the garden in the winter, and it is a healthy alternative in stir-fry and in soup, especially for the many who are choosing to go gluten free.
I mentioned that cutting the zoodles is a good choice, and I probably should have said "it is a necessity," because this type of noodle is not easy to chew/cut apart the way regular pasta is, so having it already cut in smaller, more manageable bits is very helpful.
Also, to use the frozen zoodles: simply remove from the freezer and defrost. Once defrosted, cook the main meal (stir-fry or soup) and add the zoodles toward the end of cooking as they don't need much cooking time. Cook for 5 minutes or slightly more, depending on how soft the texture you want: the less time, the firmer the texture.

Credits for the filming of this video go to my 14 year old daughter: it was her first time filming me. A fair amount of editing went into it as a result of much chatting and laughing together, especially when she let me know half way through videoing that the low battery light was flashing. I am hoping this fact is what made me appear incredibly messy in my handling of the squash...please tell me I'm not that much of a messy cook in real life!
I have had many people ask me about how to freeze zucchini, and not finding anything already on KZread about it, I decided to try making a video about it; so please, don't be too hard on our efforts. I always said I could never do a cooking show because I seem to have one catastrophe after another while cooking, but I was hoping a visual explanation would work better than my verbal attempts have been.

    I cannot believe no one has commented. I found this very helpful. It seems to me that it would also work for the little slices of zucchini for zucchini bread! A little hint for getting the backing sheet to not move around so much - put a towel under it, between the wood counter and the metal pan. It also works with metal mixing bowls that just refuse to stay in place!

    I should mention that the 'kneading' method seems very effective. I've seen people suggest the salting and then to just let the zucchini (slices in most the instructions I've seen) sit and drain the water off. That probably works better for slices, but with the zoodles it looks as if you could remove much more water your way! And again, this method would work for the somewhat grated zucchini as well.

    Hi! Let me know if you liked them. I have experimented with them in different ways. I think it helps to realize they won't taste like pasta made from flour, but they are an alternative when trying to watch carbs or use up extra zucchini. We liked them best in home-made soups in the winter.

    Thank you. I am glad it is helpful. I would think they would last like any vegetable in the fridge, maybe a few days....or best to put in the freezer. I am truly not really sure on their refrigeration life though. I am sorry.

    I kept mine in the freezer well into the winter. They seemed great for several months that way, but I mostly use them in soups. My husband even liked them that way, and he likes pasta better than zoodles, so that was what worked best for us.

    Really enjoyed your video and the information you had to share. Glad to hear that you are at least responsibly repurposing/reusing/recycling in some sort of a way...using as a feed product. But, why not repurpose as a probiotic food product (i.e., zucchini pickles)? Maybe a new video for your channel?! Looking forward to it and other new ideas!     Ha, ha! Yes, I AM a messy cook!!! I really saw that after we made the video and watched it, but I didn't have the time or energy to redo it as if I was a neat cook. :) I am definitely trying to be neater, but I think I hurry too much. Somebody needs to do a video on how to be a neater cook. :) And what a great idea about the probiotic zucchinis! I never thought of that. I would love to learn how to do that. Our Amish neighbors make lots of different fermented items...such an art. I do hope to master that someday, but until them, our pigs and chickens will just get the healthy benefits. :) I wish there were more hours in the day. :) Thank you so much for your honest, helpful comment.

    Nice video. so I assume after doing this (draining all water out) they can be frozen and the thawed product won't be mush? (as with just freezing as is)

    I kept mine in the freezer well into the winter. I used them all by the time the following summer came around, but I used them mostly in soups, so I can't really say how fresh they would taste in stir-fry that long. :)

    Yes, before cooking in a stirfry, they should probably be rinsed some. I like them in home-made soup and my broth could always use salt, so I found I didn't need to rinse them when I made a big pot of soup. I guess you kind of have to experiment to your taste. :) I hope that helps.

    I did find they should be rinsed some before making a stir-fry, but when I used them in my home-made soup, I don't think I rinsed them b/c I always have to add salt to my home-made soup anyhow. :)

    I don't understand why don't freeze the veggies themselves? This seems like its going to detract from benefits of eating veg in first place. That water that has been filtered by the veg and infused with at least minerals, if not other goodies, is now being taken from the veg. Anyway nice home/homemaking👍

    Thank you! I love our home. :) I wanted zoodles because I was looking for a noodle type replacement to try to cut out carbs. My husband didn't like them in stir-frys too much, but he didn't mind them in soups, so that is what happens to most of them when I freeze them.

    Well, if you have too many zucchinis, this could be a way to have them in the winter, but I mostly did it b/c I was trying to find an alternative to regular noodles and cut carbs. They work well in soup for that. But yes, you are right...fresh zucchini from the garden is best! Loving it right now! :)
