Very simple method
Why a zipper foot? Can you use anything else not sure i have one
When you wash it, wouldn't it flip out again? I usually sew down the fold. But I still like your idea.
Would have been more clear if your seaming with the zipper foot had been shown up close where we could see how close the new seam is.
