    Short. Simple. Looks delicious! The fish we buy here in Alaska is a lot different from the bass, carp, and catfish I'm used to in the south. I feel more confident cooking this fish now. Thanks!

    Might be the tastiest fish in the world but its the same price as salmon... hope it doesn't get too popular in the US

    What do you do do with the skin? Are you going to eat it or peel it off to the side and discard?

    That’s to keep the skin crispy. If served skin side down, you’d lose all the beautiful crispiness that was just created, especially if serving with a sauce as he did. Happy eating! :-)
