It's a spoon that he was using to scoop the butter within. If you ruin your pans through that process i feel like the issue is more about you and how you cook than it is your utensils

I've been going to Allrecipes for my cooking ideas for a long time because of how simple they usually are. Alot of the cooks on the internet forget that not everybody has an Asian market in their town or a whole foods where they can get shallots. Seriously, why does every recipe use shallots?! The ones that Walmart sells (which are the only kind I've ever seen in person) taste EXACTLY like red onions but at 10 times the price.

A fun watch. I'd baste with clarified butter or ghee. The water in butter cools the pan and steams the crust. Remember why you patted the fish dry earlier. That handful of whole herb is photogenic, but it is wasting flavor. I don't put salt in my cookware if I can avoid it. Salt is both abrasive and corrosive. Seriously, a nice vid. Lovely fish. Wow.

I wouldnt pepper it since the pepper will just burn. Basting salmon that heavily is wild imo but do you. How you cooked 7/3 and ended up medium rare is what really escapes me. I do my salmon well and use about the same timing, so not sure whats going on there. But the real crime is no lemon.

Poach. It. Then quick sear in herbs to flavor. Lemon, dill, butter sauce. Sprinkle with capers

When he baste it, notice he tilts his pan and have the salmon on the "off heat" section? hes basically using residual heal + basting to cook. At least that's my take.
