I imagine you could use a sardine as a substitute, not sure on mackerel. However, it’s all about experimentation!

Is it possible for me to run it just like you rigged it, without a lure? Will the spring cause it spin or anything?

You can run it like that. However, some would argue that the spring takes away from your bait presentation. It won't cause any spinning, etc., just might not look the best in the water without something covering the spring. Thanks!
What weight/pin do you use and where do you get it

The egg weights are most commonly 1/4 or 3/8 ounce, the pins are typically #9 or 10 wire. We have that stuff for sale on the site @ thetackleroom.com. Thanks!

Typically 3/8 oz
....geeeesh..... all I could focus on was that lump of ballyhoo crap stuck to your finger......triggered my OCD....😂🤣

Understood. This how-to is more for folks starting out, vs tournament anglers such as yourself. Thanks for your feedback.
Don't pop the eyes out. and don't cut fins. Totally out of the normal. I wouldn't use the sinker.Better for mullet. Don't poke a hole prematurely just let the hook come out where it will but in the center.How come when you buy pre rigged ballyhoo you never see this. He and others make this to complicated when it is really far more simple
