Eldon gives two tips on how to remove the strong "muddy" or "fishy" taste from catfish. Some fisherman throw catfish back because they do not like to eat them. Follow these tips to make catfish a mild-tasting, delicious treat.

    The muddy taste is not in the meat itself. It's in a small lateral line "mud vein" that runs along the fish between the muscle groups. You don't have to waste all that meat if you just find the vein type structure, and pull it out. It will look like a white string.

    Been eating Cat for a while, mostly smaller ones. Ate a bigger one the other day, and MAN did I have that damn muddy taste in my mouth for a whole day. This is the info I was looking for, thank you very much!

    yep. I first hang mine on the stringer and cut the tails on top and bottom with snips about 1" and let bleed out for an hour. then fillet and soak them in salted water in the fridge overnight. then I remove the red with a fillet knife and remove the fatty yellowish strip on the top. I scrub the silver lining off the belly meat too. makes a HUGE difference.

    Thanks for the tip. Another way to do the same thing is to cut the gills, that also allows it to bleed out.

    thank you great to see at the end you called for a brine with salt and lemon juice that i think helps cut out the oily fishy taste but the blood line is difficult to deal with on smaller bull head fillets trying to remove them while keeping the fillet whole ,but its better to remove the whole thing and cut them in half bite size piece then deal with the bad taste

    Best fish I ever had was deep fryed catfish . Catfish batter in corn meal and some lemon that was some good eating.

    Also, if you like hot sauce on your catfish you can marinade them in the sauce. I take 1-2 pounds of catfish and place it in a large ziplock. Thoroughly cover the fish with hot sauce (I use RedHot or Louisiana), let sit in the fridge for 2-4 hours. Let the hot sauce turn a milky pinkish. The muddy taste comes from a compound called geosmin which is in the alge the fish eat and can be particularly high in farmed fish like catfish. Make sure you rinse thoroughly, you want to get all of the milky marinade off. Pat dry, season to taste and cook as desired. If you, like me, love hot sauce on your fish, YOU WILL LOVE THE FLAVOR.

    Been watching catfish cleaning on KZread for awhile this is the only one that was correct so far and the pond raised commercial fish aren't necessary better for you they are fed with pellets that contain growth hormone and antibiotics just like commercial feed lots

    Soak the fillets in lemon/lime juice for 3 hours in the fridge. Pull out, rinse throughly and season. Been doing it for decades...

    just straight lemon juice? you will need alot to cover them no? unless its enough to just coat them , but suppose i like to brine my fish how about juts adding the lemon/lime juice into the brine instead or should i do it your way then add them in salt water?

    @@ARCSTREAMS Yep that way works also. Also soaking the fish in milk or buttermilk. Pulls that gritty, muddy, sand taste out every time.

    Do let it soak over night in the fridge or just sitting out in the house or cooler temperatures ? This video is a big help, especially when you love fish and your wife doesn't like the fishy taste

    I've eaten catfish for a long time and never had a problem. Like all meat, it's important you take care of it and keep it cool and clean. I'm not quite sure what you're trying to say - perhaps you can explain yourself a bit better. Thanks for the feedback.

    I left my fillets in the bowl trying you bleed then out on the counter for 6 hours... Is it ok to eat whenever I cook them since I put then in a fridge

    when you brine it, it makes it taste bomb regardless of cutting out the red meat

    @@ARCSTREAMS Walmart Tilapia which had extreme muddy flavor. Discarded the reddish areas of the fillet by cutting them out. Dipped in water and lemon juice for a bit. It helped a lot in masking the muddy flavor, but I decided to throw away the remaining tilapia fillets. Never bought Walmart Tilapia ever since.

    @@calvin8779 ahh ok yeah removing that redish meat as much as you can and def using lemon/lime juice in a brine helps remove that oily fishy taste but cant say i ever experienced this with any tilapia filets i ever had they were quite good and firm ,too expensive though ,the family buys balsa but i find those to hold too much water and they are way to flaky for frying

    ya I cut mine and let them hang an hour. they barley bleed when you fillet them.

    Heres another trick and it dont waste meat, if you happen to live near a creek or other relatively clean water source get you something like a chicken cage put it in the creek with your fish in it still alive of course let them sit in the creek over night this washes a lot of the muddy taste out of them I have tried it and it works well especially if the fish came out of a real muddy fishing hole.

    from what? I have hunted and fished for 30 years eating my catches. I farm rabbits and have hens right here at home. never gotten sick from them. in fact I fried up some catfish just last night.

    Of course I decide to watch this after I already fried up my fish... I'll have to try this my second time trying catfish. The muddy taste was weird af which is a shame but once you get past that it's great fish lol

    I use a sugar and saltwater brine. Soak overnight. Also I’ve stopped filleting my catfish. I just skin em Remove the head and guts. You get a ton more meat this way. Fall off the bone goodness.

    I saw an Anime where they kept the caught live catfish inside of a ring of rocks in a river to prevent them from escaping as cool clean water flowed through them, the characters said a couple of days in this contraption would remove the taste of mud. Any thoughts on that process? Also the Anime was "Cooking Master Boy" good show!

    I wouldn't put lemon juice in a reactive container. Make sure u don't do that in a metal container

    soaking it will make a hot oily mess when frying tho better marinate it wit sum olive oil pepper lemon juice white whine dill or garlic lil batch of honey

    These are a breed of catfish called "MUD Cat " , go figure ! Tabbies , Channel Cats , Blues ... and so on , taste wonderful . WE in the South find these preferable to Bass , Carp , or a lot of salt water varieties . In Mississippi , pond raised catfish is a booming industry . Millions of pounds are exported annually . We have as many Fish Houses (batter fried catfish fillets) as McDonalds .

    +Ben Franklin I like fishy taste as well, but not the muddy flavor that catfish can have. The thing is, they don't always have it. It seems to depend on what water you pull them from. Thanks for the comment.

    I don't understand this concept. If you don't like the fishy taste of fish then don't eat it. Its like eating a steak and complaining that it tastes beefy.

    Yes good tips, but only thing i say is they don't have the blood line in the stores? Yes they do, i work at a grocery store and just glanced after someone mentioned the mud-line and seen its the exact same as in your video. So yeah never buy in the stores, 8 bucks a lb, dam you get it for free fishing and is 100% fresh, like everyone says you don't know how long its been sitting in that dam store, ah yeah i do, for a loooooooooooooong time.

    The one thing I might say in defense of store-bought catfish is that those are raised in a controlled environment and typically do not have the muddy taste like the ones you catch in the wild. They don't need to remove the strong-tasting parts of the filet because they taste fine. That said, I do prefer fresh fish over store-bought any day!

    I have a really good idea! when are planning to eat catfish from a lake or a river cut the tail of the catfish and let the blood pump out.... no more blood cleaner meat!

    The easiest and fastest way, without wasting any meat, is to soak them in a bowl of a mixture of 1 can of beer and a small bottle of Tabasco sauce. Just mix it slowly because it foams up as you pour the 2 together. You won't taste the beer or Tabasco sauce. You only need to soak the meat for roughly 1 minute.
