Thank you so much 👍🏻 Maybe you could someday make a video on how you make your own ferments like kimchi. I know there are many good resources on KZread, but I would very much like to know how you Dr Sean make kimchi or other ferments. For example: How Long do you let it ferment, what ingredients and tools do you use or recommend. Maybe also other ferments you make Like kvoss or kefir. I think many other followers would also Like such Videos 😊 Thank you for sharing all your knowledge, Dr Sean. I already learned so much from your videos ❤

    1. I make milk kefir from raw, A2 Jersey cow milk. Kefir grains are available online and once you have some, they grow, so you never need more. Put a spoonful in a glass bowl, add the milk, drape a cloth on top. In a day or two the milk will curdle into kefir. Stir the separated cream back into the kefir, remove the grains by hand for the next batch, pour the kefir in a jar, mix it smooth with a motor whisk, then either set it aside to ferment further or put it directly in the fridge. Keep it simple (no straining through a sieve, etc.) 2. For ferments, there are pickling gizmos which have a water/air lock to allow the CO2 to escape while keeping air out. Just make a 3% salt brine, put whatever you want in the jar, cap it with the air lock on top and wait. Lots of info online - no specifics required. Have fun with it.

@@john99776 How Long does it take until the ferments like e.g. kimchi can be consumed and how do I know they are really ready? How Long does that Take? Some sources online say 2 days, other 5 and some 2 weeks... Probably the longer the more beneficial microbes in there I would guess. But can it get rotten if I wait for too long? How long do you wait until you consume the ferments?

@@Mareike-aka-Mary-1337 I made some sauerkraut recently and it took about 4 weeks before it was tart enough to suit me. You can just open the lid to taste. The lid and air lock just prevent fungus, etc. from getting in and growing on top over time, but with salt brine the food itself isn't going to spoil. Most of the time, it's easier and cost effective to just buy fresh, unpasteurized, organic, refrigerated ferments from a good health food store. Doing your own is just a hobby, and it makes more if you're doing it for a family. I also have a 6 liter fermenting crock with a water moat seal for large batches.

I use a hand grinder to grind my organic coffee beans..even though i have no money whatsoever, etc, i invest in high quality organic coffee when i can or i use dandelion roots, after collecting, processing and roasting them .. they are so delicious. I never buy anything in a plastic packaging or cans (cause the lining has plastic,) people need to wake up and smell the real coffee! Don't gamble with your health people. Peace and love to all.

Congratulations Dr. Sean on expanding to Naples Florida. I spent a month down there a few years ago - beautiful area. I agree about drinking only organic coffee, and In addition I recommend drinking only decaffeinated. Coffee has beneficial compounds, but caffeine isn't one of them. I also buy green (unroasted) beans online (Coffe Bean Corral is one source) - it's fast and easy to roast them only as you're ready to use them, and to your preferred taste, in an electric hot air popcorn popper. Nothing like freshly roasted, organic, decaffeinated, freshly ground and freshly brewed coffee. I use a moka pot and a stainless french press, but my favorite is a Kalita pour over funnel with oxygen-bleached Kalita filters.

Spot on, i've been hand grinding with orphan espresso pharos grinder. Electric ones that are ok are the capresso or baraza versions. They are all ok. Better ones are turin grinders, bigger burr size. i do pour overs mostly. And threw just about all plastic things that touch hot liquids. Pourover baskets are usualy plastic. I use metal or ceramic ones. I threw plastic wrap away. Use foil. No microwaving in plastic. I did, some in the past. I think it has helped stopping that. No plastic lids for coffee cups ever. Use metal insulated and silicone lid covers for tea. They do not smell and shouldn't. No plastic straws either. Get metal ones. Kids love them. or glass straws, they are fairly durable. More fermented foods has helped, fasting definitley. Your protocol is great and I recommend it to anyone that wants to listen. Most wont listen but you have to try. Organic or not is up for debate as the shell is peeled off the bean/seed before drying. Of course things used can get into it. Also just saying organic doesn't guarantee it but it has to be an attempt at better. But if that farmer says, i just wont say anything. I do enjoy the hunt to be more clean. Keep on Dr. You've been on this viceral fat as a marker for a while and society is ever grateful. I've been doing fat shaking and vibration, i feel it has a positive effect on fat deposits and form. It's softening it and re-distributing it. I was a huge seed oil user by my ignorance. Some reports say 2 to 3 years to eat more saturated and get the poly/mono fats out of your body. My belly button fat was very firm for 1.5 years and this vibration and shaking has helped pretty quick, it is more pliable there. I'm talking about george of the jungle fist impact and slaps. To warm it up. Interesting and weird but i'd say try it out. It's like self boxing. I'm on a tangent i know. I've been home roasting coffee for 10 years and love it, super fresh.

@@Mareike-aka-Mary-1337 I would just go by taste - if it's salty and sour you'll know there isn't enough carb to worry about. I don't know how long it takes for lacto-fermented fruit because I just figured this out today on the web. I tried fermenting figs last year in non-salted water to make kvass, and it wasn't bad but kind of iffy, but we should probably ask Dr. Sean if there are any tricks to making kvass. I doubt it though - using an airlock of one design or another is about the only real trick to keep any stray mold spores from the air from producing gunk on top of the food.
