low water cut off probes are one of the most important parts of any boiler. It does not matter if it is for a home or building. Low water cut offs protect the boiler from damage. they should be looked at every year. If any signs of damage are found, it should be fixed or a new one put on. It is better to be safe, then sorry. steam boilers do not run with a full water level inside. They should be looked at as much as you can because any loss of water could be a big problem if it is not fixed.

All the ones that I work on are so old they have a float type low water cutoff.
Is there a typical life span on one of these probes? Are ]you changing based on the gunk build up?
Let me guess there was an auto feed on the boiler?
good ole fail safes... when they fail...
Remove and clean every year.
