    Thank you for the good explanation about fileting the fish. The croutons came out unfortunately soaked with oil and therefore unpleasant - if I am to make the recipe again, I might use just a hint of the oil in the pan.

    Amazing recipe, we just tried it with green onions instead of chives for the sauce and it's just outstanding. Best fish I've had in a while.

    If you ask me my greek pellet says the best way to grill a bream is simply olive oil, garlic salt and pepper but I'm willing to try this.

    lemon and mint make this dish so fresh and exciting. I tried it today and I loved it. Sure, what you are describing is a classic and it works. But some variation can bring excitement to a familiar dish.
