    What herbs did he put in? I see rosemary, but he doesn't talk about herbs at all. Is the "sauce" he spoons over the final lamb basically flavored lamb fat?

    If your grocery or butcher shop has an actual butcher, just ask. Often cuts are not out but they can do them for you. I asked for a lamb shoulder the other day, and the butcher picked up what appeared to be an entire lamb and cut off what I needed.

    That music is really obnoxious. And loud. And percussive. I could only last halfway through the video, and Tom is one of my favorite chefs, and I just ordered this pan.

    Sorry Tom but your lamb is overcooked, should be rare or at least medium rare, not medium. Also all your videos rely so much on precise heat control which can only be obtained with gas. Most people have some type of electrical stove, glass-top, open-coil, induction. Why not some cooking tips/techniques for using the cookware with those heat options?
