About oysters : Here in France, we do not keep the initial "juice" (which is essentially sea water or whatever type of water it has spent the few several days or weeks) but we rather discard it. We then lay the oyster flat and a second juice will appear which is much tastier and will also make the oyster meat more firm.

In regards to the mustard of the crab, take what he says of "Don't throw it out" with a grain of salt. I love that you mention killing it in the most humane way possible, I know a lot of people think that they can’t feel pain and then just cook it alive, but certain studies have suggested they do feel pain however different it is from our pain. Plus there’s no harm in killing it before cooking

That's just how he gets the meat that he's going to be using. Feel like he totally screwed up the "Humane" way to kill a Lobster, that or he totally didn't tell us what he did. With crustaceans you're supposed to chill them in cold water to shock the nervous system (I've read both your supposed to use salt water and others say fresh but I don't know that for sure) and then kill them immediately after for them not to feel it! He just totally plunged the knife right into the damn thing!
This video and the “how to cut every cheese” with Anne Saxelby are my two favorites 🤣
dude, most of these almost ( already did) cut my finger(mostly the crabs) and took me a while to do yet you just made it look sooo easy like pealing them of

Another tip, if you try to open up a crab especially the claw part but you don't have gloves nor scissors nearby, the easiest way to do it is to bite the exoskeletons off. No you do not eat them, you just bite them hard enough until you hear a crack, then open them up to get the meat.
This dude is ruthless 😂 luv it thank you for showing me these things this knowledge is big fr 🤞🏼💯
