You can probably use either one, I haven't tried a small food processor, but I don't see why it won't work too ☺️

Love your lessons, the sandwich one was brilliant. What I got out of it was thin 'glue' and thinly cut vegetables, and let the sandwiches sit wrapped to 'cure' in the fridge. You are so methodical, and i think it's really helpful. Glad I found you. I'm Leslye in Montréal. :-)
Amounts? Sometimes I sprinkle 1/8 tsp cayenne into mixture
