I love rice pudding, however, I am allergic to dairy so I can't just buy it at a store. Because of that, I decided to try out a vegan way of making it with coconut milk and condensed coconut cream instead of using regular milk products. The result was some delicious, vegan, dairy-free rice pudding! If you guys are dairy-free, vegan, or just adventurous and try this out, let me know how it goes!

ABOUT THIS CHANNEL:
My name is Camille Johnson and I just moved out from home onto my own and am absolutely loving cooking! I took a cooking class and a baking class in highschool and have helped my mom in the kitchen a bit, so I have a bit of cooking knowledge. I also secretly looove watching the cooking network but that's hardly a credential!
I decided to start this cooking channel to share how I work in the kitchen, trade tips and tricks with other new cooks, and to challenge myself to learn new skills and new dishes.     U should still add a tiny bit of salt in desserts. It brings out the flavor as long as it's a little pinch. I put salt in cakes cookies brownies anything lol

    Another suggestion: Put a cinnamon stick in the boiling water to get a stronger flavor! I usually do that at home!

    Canned chickpea water. Strain the chickpeas, save. Use the liquid as egg yolks, whip them. And it will float. Look up "aquafaba".

    You cooked it in water not the cocanut milk that's why the rice didn't absorb the milk well.

    instead of putting the ground cinnamon in.. try boiling rice and cinnamon sticks together. 👌 in my opinion, u can taste the difference

    It's midnight and I watched this video even though I can't eat rice OR coconut anymore! You are a delight and it looks SO good. 1) Pure Vanilla vs Imitation Vanilla isn't a flavor difference most people notice; Imitation is a little less complex (because it's a synthetic version of a compound that is in vanilla, but not of ALL the compounds that are in vanilla). Use what you like, most guests won't notice! 2) White rice is best for most pudding! If you're ever in the mood to spend a lot of money on fancy rice and experiment a bit, arborio is really good for a rice pudding BUT I don't know how it works with the coconut milk. Or try pearl rice, which is common in Puerto Rico where coconut milk is the standard, anyway! I miss rice pudding a lot, sometimes! I made it with almond extract and dried cherries a lot (instead of vanilla and raisins, but I can't eat cherries anymore, either). It's so versatile and it's a dish that, in some form or another, is ancient and international. What's not to love about that?

    FYI: just so you know, adding a pinch of salt will not create a salty taste. I know, I thought the same thing when I first started cooking 😉 It just brings out the flavor of whatever you’re making.

    This is a great recipe! I make mine the same but when I'm boiling my rice I don't use water, I use vanilla flavored almond milk instead, it's even creamier result

    You can make vegan whipped cream with the coconut milk 🙃 gotta make sure the fat is solid and just whip it up in a bowl. 💥

    I have never used long grain rice for rice pudding?? Traditionally you are meant to use short grain pudding rice so I'm curious to know...how did it taste? :)

    "Coco Whip" is an amazing alternative to whipped cream or more like "Cool Whip." It tastes just like whipped cream. You can find it at Sprouts and I think Whole Foods.

    Salt is a flavour enhancer and activator. A pinch in the rice wouldn't make it overly salty

    You should always use a pinch of salt, even in desserts!! It’s actually quite important to bring all the flavors out. That’s why pretty much every dessert recipe calls for a pinch of salt. 😆

    I am Spanish, and what you made is coconut with rice..... if you love coconut then you will love this but if you don’t you will hate it. The thing about rice pudding is you are not supposed to taste the coconut... My family is unfortunately coconut haters, BUT they love my mothers rice pudding, as again you would never know there is coconut in it. My son is anaphylactic to milk so I had to somehow recreate moms famous rice pudding without the milk, and he also hates coconut .... but I did it! One day I will hate the recipe...

    Hey! ^_^ You should try to boil the water with cloves and stars. That's how I've seen Puertorican women do it and it smells good and tastes amazing as well! And yaaasss Coco López is the most used brand here (also Goya but that 11.5% tax though...) Keep them cooking videos going gurl! Love you boo

    +Offbeat Cook They are actually called Illicium Verum, you can find them in the spices section. We called them stars because they obviously look like stars lol. You can put them along with the cloves in the water and just boil the water, then remove them before putting the rice \^.^/ And gurl I live in the island of Puerto Rico so yeah XD

    Offbeat Cook Try looking for Star Anise in the spice section. It's probably around the cinnamon, the actual sticks not the powder btw.

    there is a huge difference between real vanilla and the fake stuff BUT if you are baking or doing anything at higher heat the complex subtle flavours of the real stuff gets killed off. so for this its likely much better to use "real" vanilla. btw the cheaper "fake" stuff is vanillin a synthesized compound and by smell instantly recognizable as vanilla and for baking generally will suffice. hope this helps.

    It’s better if you don’t rinse off the rice for rice pudding anyway. The starch helps the pudding thicken

    You should try making black glutinous rice pudding. Black rice is high in antioxidants. And it tastes so good! Here in Malaysia we call it Bubur Pulut Hitam.

    When i tried doing this recipe,i think i added too much coconut cream.also at the end of cooking,it didnt really taste "sweet " to me...tasted more nutty than anything. i wonder if the brands of milk and cream make a diff with how it tastes cuz the stuff i used had no preservatives or sugar in them.will try again but with less coconut cream .🙂

    Question - does oat milk work as a substitute for coconut milk. I’m not allergic to coconut milk, but I want to make this for a pot luck, and there are some folks who are going that are allergic to nuts (including coconut).

    Bruh, I'm allergic to dairy, too!!!! I don't know anyone else who knows the same struggle. Also, idk if you know about it now, but there are a couple of dairy-free whipped cream options. There's a brand called Soyatoo I think with whipped cream ready to go and also stuff you have to put in a mixer to whip (it might be by the same brand, too). I haven't tried it yet, because its manufactured on shared equipment with dairy. When I was at school, my skin was too awful to handle cross-contamination, but now that I'm home free I might try it sparingly.

    I add cloves to mine. loveeeeeee rice pudding! make sure to always stir cream of coconut. the oils separate.

    Yess I know a few other people do that too. Do you boil them and take em out or leave them in? And yeah I had the separation thing happen to me last time but for some reason this one was all combined? Weird

    If you used an immersion blender with brown rice, perhaps you could get the flavor without as much "chew"...and maybe add the star anise and cinnamon in the cooking process...?

    One time I was at Costco and I remembered I needed to grab some vanilla extract. When I found it there were two different choices, one was up high where I couldn't really reach, was kind of small and cost about $10 dollars, which I thought was a lot. The one I could actually reach wasn't labeled with a price, but because it was in a slightly larger bottle, I thought it would be cheaper than the other one because I thought it was probably the "fake" one I was grabbing. Anyway I should have read that label because when it got rung up ,it was 30 dollars. The line was really long and I was too embarrassed to put it back so I just bought it...lol Can't tell a difference with it either so I feel kinda dumb but I (probably) won't make that mistake again

    I did the same thing with the Vanilla. I looked at the recepit when I got home. I bought 3 vanilla organic pure vanilla. Was like 22.00 each about 1.5 years ago. I almost died!

    Rule of thumb when making any kind of sweet dessert you always put a quarter teaspoon of salt the salt brings out the sugar flavor it inhands it. It will not take the salty flavor it will taste much much better. Good luck dear🍚😉

    For rice pudding you need either medium grain or short grain rice not long grain.

    You also need to add a pinch of salt to any sweet product that you are making. It gives balance and you can't taste it.

    They make vegan whipped cream. Just go to you health food store or look online at specialty vegan stores.

    The "normal" vanilla has more alcohol in it, so cheaper and more fl oz. when you buy it. The pure vanilla has less or no alcohol in it. :)

    You should try Nutmeg instead of Cinnamon. To me it taste a bit better, especiallly with a bit of ground cloves...awesome video btw!

    I can’t wait to try this recipe! I love rice pudding, but am now vegan. So, thank you! You had asked about imitation vanilla extract..I personally don’t think it even tastes like vanilla. And I’ve done much research on where it comes from so here it is straight.. “A chemical compound used in vanilla flavored foods and scents comes from the butt of a beaver. Castoreum comes from a beaver's castor sacs, located between the pelvis and base of the tail. Due to its proximity to the anal glands, the slimy brown substance is often mixed with gland secretions and urine.” So, I’m not sure who decided to taste beaver butt juice, but now we have fake vanilla, called vanillin.     There some "test" on the internet with cookies that had real vanilla extract and cokkies with "fake" vainillin extract, and tester didn't notice any difference, so go ahead with the fake vanilla (anyways it even tastes and smells better than the real thing).

    you'd get more flavor and non alcohol version of vanilla if you used real vanilla beans. i make a vegan rice puddin as well

    Slice the bean open down the center. scrape the inside out and throw them into pot so it will be more aromatic and flavorfull.

    Ayy you're the first comment! Rice pudding is soooo good. I was always obsessed with it as a kid. Half of my family love it and the other half doesn't get it, but it's definitely worth trying out at least once!
