Soy sauce 100ml
Water 400ml
Mirin 40 ml
CHASU MARINATE
Used (Ajitama Egg) Marinate
Soy sauce 100ml
Sugar 30 gr
TARE
(Soak overnight)
Water 250 ml
konbu(seaweed) 7.5 gr
dried sardine 10 gr
bonito(katsuobushi) 10 gr
siitake mushroom 5 gr
- combine -
(Cook 20 mins)
Mirin 50 ml
Soy sauce 150 ml
salt 6 gr
sugar 3 gr
TONKOTSU BROTH
Pork Bones 2kg
Water 2.2 Ltr
RAMEN NOODLE
Bread Flour 300 gr
Baked Baking Soda 3 gr
Salt 3 gr
Water 120 ml

    Good video. It's not too clear tho if the water you use in every step to make the broth is new water or you reuse the one in the step before, specially in this moment 4:24. Is this water you are putting in this moment new and clean?

    Interesting method to cook the bones and save a lot of time. If I use a conventional european pressure cooker, are same times one the cooker stars boling?

    You probably need a longer time if pressure cooker is not used, and it must be boiled at high heat for several hours to break the collagen. Check ramen kaonashi channel, I think it has some video about this method. Cheers :)

    @@hungrykiwis353 One question, between the first (30 min) and second cook batch, you are using new water, righ? You say something about cold water after the end of the 30 mins, but then idk if you are using the same water for the second cook or if it is the water that came from the 30 min cook (since I didn't see you throw it away)

    @@EPK_AI_DUBS correct I was using new water during the simmer from cold water process, and I keep the same water until the end (Eg: I only throw the water once during the first initial 30 mins)

    For how long do you Simmer the bones in cold water (after you take them out of the initial Par Boil in the Pressure cooker)?

    Not long (maybe 4-5 mins?) I normally take it out and transfer it to pressure cooker as soon as it steams up. basically we want to ensure the bones are clean and no more scum raising to the top. Hope it helps!! thanks :)

    Hi there, no we didn’t. I think what it does is to help release pressure during boiling process (to prevent from cracking).

    Hi there, we never use vita clay but it seems it able to do some pressure cooking capabilities. Probably need to be cook longer than an actual pressure cooker. Worth to give a shot and would be curious of the results! Thanks for watching:)

    Tonka Tonkatu I s easy to make but whet about the same, it's ketchup based, I learned a years ago since I am from HAWAII and there are a lot of JAPANESE PEOPLE who have In the ISLANDS 🏝 SHOULD BE noted
