How to make these delicious Soft Layered Chapati Big Batch At Home |Chapati Recipe | Chef D Wainaina

Тәжірибелік нұсқаулар және стиль

Chapati is a favorite of many households in Kenya.
This unleavened flat bread bread cooked on a griddle or cast iron, called karai in Swahili was brought to East Africa , Kenya in particular by Indians who came to help build a railway line from the Port of Mombasa to the interior regions of Kenya and Uganda in late 1890s.
In this video am sharing how I make my big batch chapati at home to share with family and friends.
INGREDIENTS
5 lbs ( 2,27Kg ) All purpose wheat flour
2 Tbs Kosher salt
1 Tbs Granulated sugar
1 Tbs Vegetable oil ( I used Olive canola blend )
1.5 Qt Luke warm water + extra water as needed
Extra flour for dusting
Extra Vegetable oil for layering and cooking

Chapati is urdu word, we also call it roti. We eat this here everyday. We normally use simple dough with any ingredients...but if someone wants to add sugar or salt it depends on the mood or situation

Anyone have an idea why chef's dough was not sticky, at any point, or how to avoid sticky dough at the initial kneading stage?

  • @chefwainaina

Thanks so much for watching. I used a dough mixer for this recipe, and it did most of the work until the dough was ready to roll. If you are kneading the dough with your hands , you will definitely go through the sticky stage but no worries, just keep working the dough and using extra flour if need be. Hope this helped. I'm looking forward to your delicious chapati.
