How To Make The White Lady - then and now

Today I'll be showing you how to make the white lady! This is an airy gin cocktail that goes down easily, but my recipe is far from the original. When Harry MacElhone created this drink in 1919, there was no gin at all! I'm curious what that will taste like, so I'll be making one of those too. In my version I use egg white, but that is entirely optional. There are a couple of different ways to try this drink - see which one you like the best! Cheers!

1.5 oz. (45 ml) Plymouth Gin
3/4 oz. (22.5 ml) Luxardo Triplum Triple Sec
3/4 oz. (22.5 ml) fresh lemon juice
1/4 oz. (7.5 ml) semi-rich simple syrup (1.5:1 sugar:water) OR 1:1 simple
Egg white from one small egg OR 3/4 oz. (22.5 ml) aquafaba *

3/4 oz. (22.5 ml) Tempus Fugit Crème De Menthe
3/4 oz. (22.5 ml) fresh lemon juice

    So many versions of this drink! What is your favorite recipe for the white lady? Has anybody tried all of these? Maybe a video in the future on every version? Would that be even more confusing? Does it even matter in the grand scheme of it all? Are you still reading this?

    I have a variation of it that i made that I love - "Blueberry Thyme White Lady" which uses a blueberry simple syrup in place of the regular, and adding drops of thyme tincture.

    Back in 1990s San Francisco, we drank the egg-less version of the white lady, the Delilah. Sooooooooo good. I'm going to have to try both recipes now, Anders; they sound fantastic.

    Just made the Classic White Lady for my wife and it was a hit. We have had a “bush lemon” tree in our yard for over a decade and today it’s fruit became juice and then a cocktail - it will definitely happen again.     I just made a couple of these, and I think this might be my new favorite summer cocktail. It's simple, refreshing, and luxurious all at the same time thanks to the egg white. Unless you're vegan, I strongly recommend folks add the egg white. It gives body and structure to the cocktail and lends it that special umph. Thanks Anders!

    Sara, I hate eggs (exception for some egg white cocktails), but some companies make great foamers like "Ms Betters Miraculous Foamer" is an excellent egg white/aquafaba substitute

    I think this might have been the first video of yours I saw. I've finally gotten off my bum and made some creme de menthe (because it's not that easy to get it around here). Your description of the "Old" white lady is spot on. It's really lovely. But exactly what you said: mint on the nose, the orange is really subtle, the lemon is important. Great balance. Nice drink!

    Startled the daylights out of people in my house by shouting "YES" when you mentioned Cointreau instead of Triple Sec. This was one of, if not the first, gin cocktails I ever made. We had a very limited selection then, but still managed to have Cointreau as one of the mixers. I still use it as a bit of a gauge for new gins.

    Most of the time in cocktails calling for triple sec or Cointreau I’ve been using Solerno… blood orange liqueur… adds a very smooth and classy element to the orange!

    Just made the modern version... it is wonderful! I had an open bottle of Tanqueray, but I also have an "Old Sport" gin from Greece, which has hints of mastic (an aromatic resin from mastic trees, which only grow on the island of Chios - pronounced "Hee-os")... I cannot wait to try it, it should fit really well in the mix.

    Yummy. Made these the second time tonight. The egg whites will jam up a fine strainer so use a coarse one is all I have to add. Very goooood.

    I've never had a channel that I've looked forward to their weekly upload before but here we are! I'm not sure if it would be too tedious or cumbersome, but I thought it would be nice if you made playlists of your videos for each base spirit, that way in case anyone's ever like "Hmm, I'm in a mood for something with whiskey, (or gin or rum, etc.)" then they could just head straight to that playlist. Great content and videography as always! 🥂

    Hi, just started watching the last couple weeks. I thoroughly enjoy your channel, very informative. Question; for cocktails with egg white which is better dry shake 1st or reverse dry shake. Curious cause I've heard the reverse foams better?

    Something I've been wanting to comment: I really appreciate that you have a robust "playlist" where you group the different types of cocktails. Really makes it easy for me to find something if I'm looking for a Gin cocktail or something. I would love it if you started a "morning cocktail" playlist and then I would also love it if you had a "clean" cocktail playlist. The clean one would include gin/vodka (or other alcohols not high in sugars) that don't add sugar to them. I'm sure there are an abundant of cocktails like this, and I would love to see you introduce some (maybe you already have?). Anyway, love your videos, thank you.

    I tried my 1st white lady tonight - hahhaaaa. Funny I watched this, then after I had a gin n tonic the bartender suggested a white lady. I was pleasantly surprised. Obviously it was the newer version - gin forward. Thanks for expanding my horizons.

    For fun try making two identical cocktails wit grocery store egg white and farm fresh organic egg white. It’s amazing the difference that old school cocktails were from what we make now.

    I think if, in the classic recipe, you replace the lemon juice with half-and-half lemon and orange you get a cocktail called "the maiden's prayer", which takes the bite off the lemon without the need of simple syrup.

    Randomly saw your channel! You are amazing! I love the comparison between then and now for different drinks. Just a question, if I want to learn (from the scratch) to making proper cocktails, where should I start? Is there courses that you would recommend or you went through?

    Depending where you are, different courses might be offered for bartending. I'd recommend looking up some classic recipes that interest you, buy a couple of bottles, and experiment at home with substitutions and differences in ratios (that's what I did). If you want to learn more about the techniques, you might want to consider a part time job as a bar back in a cocktail bar - no better way to learn than by getting a feel for service while picking the brains of those mixing.     Cointreau is a great middle of the road orange liqueur for people or bars that want to cut down on their number of bottles or confusion for new bartenders. Great video, great drink.

    I'd tried a couple of variations now on the White Lady (1930 version), and was about ready to give up on it. (Vague, flavours didn't really pop) your blend for it is the first one we have liked. The 1919 cocktail is weird as all get out....but oddly tasty. 🤷 Thanks!

    Anders! I just made this with Barr Hill Gin & cointreau, and oh my goodness was it amazing. I'm from Vermont, and very proud of Barr Hill. I'm sure you've had their gin before, what do you like it in? I typically only keep 1 gin in our house, so it's that. LOVE it in a Bee's Knees, and LOVE it in this! Any other ideas for it? Or is it generally replaceable with a sweeter or dryer gin? Cheers!

    Substituting Dillon’s Maison Selby Pineapple Honey Gin and Real Quebec maple syrup for the simple syrup. A nice tropical take on it.

    I do find it interesting that in the uk a cocktail bar is seen as a higher class bar with most others only having one or 2 different cocktails, while it seems that in the us every bar does cocktails
