This is exactly how I make mine but instead of Colby jack, I use Gruyère. SO good! The dry mustard is key for keeping your sauce emulsified…. Most people think it is for flavor!

I make mine with sharp cheddar. The tanginess of the mac and cheese goes wonderfully with drops of Tabasco.
