RECIPE
Ingredients:
1 cup bittersweet chocolate chunks
1 3/4 cups heavy cream, chilled
3 large egg whites
1/4 cup sugar
Bittersweet chocolate, shaved, for garnish
Steps:
1. Temper chocolate, stirring until melted. Turn off the heat and let stand.
2. Beat heavy cream until it forms soft peaks. Set aside.
3. Whip egg whites with a hand mixer until soft peaks form, gradually adding in sugar.
4. Using a whisk, fold the tempered chocolate into the egg whites. Once fully incorporated, fold in the whipped cream. Transfer to a baking dish if desired, cover and refrigerate until set (about 1 hour).
5. Serve with shaved chocolate and enjoy!

Yeah it sucks that the slow mo shots are actually so astonishingly amazing but the information in the video is kinda off

They're trying to cover up the error in the info by making beautiful shots. They know that most people will notice it and most people will only sub because of these shots. That's why they don't even bother with the info.

Ramu10 I don’t think that’s the case, the text was added over the video, meaning they filmed first. For some reason the instructions were just bad.

sum tips for making this mousse lol: -when the info says fold, do not use a whisk, use a spatula or spoon if u don’t have one. if u use a whisk ur basically getting rid of all the air u whipped in to the heavy cream and egg whites. if u don’t know how folding looks like, there r some vids online to watch. - do not add the sugar to the egg whites too early or they will not form any type of peaks. I usually add the sugar right when the egg whites look like they’re going to become stiff peaks so it turns into soft peaks. Do it gradually as well. Happy cooking!

I made this recipe exactly as the video except i used a spatula to fold everything together. It came out fantastic. Flavor and texture was great. Regardless of the wording, tempering vs melting, give it a try. It’s really good.

No point in tempering the chocolate tho lol
cool chefsteps inspired editing, but I have to say, some of the instructions had errors. melting chocolate over a water bath is not tempering. "fold in with a whisk" is not possible, you are just mixing. folding means you would have to FOLD it using a spatula without deflating the air..

Yo I replayed this video bout 5 times not for the recipe but for how soothing thus video actually is. The music and the slow mo shots. Very tantalizing.
Great touch with the emoji! We were drooling and then cackling.
I like to add an egg yolk to the *melted* chocolate when it’s still warm. Gives it a richer or deeper flavour.

I absolutely loved this chocolate mousse! Always my go to recipe🥰 I do agree with others saying to FOLD with a spatula or big spoon to create more air into the mixture (I folded mine with a spatula) and the mousse is so light, airy, rich it’s definitely a recipe to try🫶🏽💕
Remember people, just because the video is good and well edited, doesn't mean the mousse is good too 😂

Hahaha if you fold the mixture correctly then yes this makes a good mousse haha, They whisked to roughly a few times (Yes i know it was fast forwarded, but you are mean to softly fold, NOT whisk)

@Eva Luimes you could use pasteurized egg whites in a carton, or dry meringue powder. I have my own chickens, so I just live life on the edge and made this mousse with raw egg whites 🤫
Just skip the egg whites parts and do everything else as said. The best chocolate mouse ever I swear. I always top it up with some whipped cream rosettes just to make things over the top!
I made this recipe exactly how it says and it was fabulous! I used it as a filling for chocolate cake. So delicious! 🤤🎂

How about the raw egg white? Did it smell?
Just made this and modified just a dash to perfection. Added 3 shakes of ground cinnamon and 1 pinch of nutmeg into the whipped cream. Poured into an orea pie pan. 👌🏼👌🏼👌🏼

This is just regular chocolate mousse. Also, you don't "fold" beaten egg whites with a whisk. That will cause your egg whites to flatten again. You fold it with a spatula, or cheat with a mixer w/ paddle attachment

This is so visually relaxing and pleasing it distracts me from concentrating on catching the actually recipe. Haha that's too funny and just means I needed to watch it a few times. I bake heaps and so I was looking for an actual recipe to use up some of those extra egg whites I seem to accumulate when baking. This is perfect. My plan is to bake slab chocolate cake and fill it with this moose then add top layer and decorate with rich chocolate genache. Form in clean baking tin with clear plastic sleeve to hold it all in place once set. It should look and taste stunning.

I thank the comments section for correcting them, I'm trying to learn how to make confections like chocolate mousse crepes and I was confused as heck when they said to temper the chocolate while they were melting it normally when mousse isn't supposed to be solid anyway. I was also confused when they said to fold it and whipped out the whisk, so thank you for that as well, of course. 'n_n
