How to Make The BEST Butternut Squash Soup

THIS IS THE ULTIMATE FALL SOUP.
INGREDIENTS
BUTTERNUT SQUASH SOUP
2.5-3 lb butternut squash
1 tbsp olive oil
Fresh rosemary
Fresh sage
1 small yellow onion
1 carrot
1 celery stalk
2 garlic cloves
2 tbsp butter
3 cups chicken stock
Salt/pepper to taste
2 tsp each ground nutmeg/cloves/cinnamon (divided)
Crème Fraîche
CROUTONS
2-3 slices bread of choice
1 tbsp olive oil
1 tsp salt
1 tsp pepper
3 sprigs thyme
2 tsp honey
Reserved spices from soup
RECIPES
SOUP
Cut squash in half lengthwise and remove seeds
Drizzle with olive oil and roast cut side down on fresh rosemary for 40 minutes at 400° F or until fork tender
While the squash cools melt butter in a large pot on medium-low
Rought chop onion/carrot/celery and simmer until soft
Add garlic and spices and saute on medium-low for another 2 minutes
Add cooled squash in chunks
Add chicken stock and bring to a boil then reduce to a simmer until vegetables are completely soft
Blend until smooth using either immersion blender or traditional blender in batches
Pass through a mesh strainer for extra smooooothness
Croutons
Tear bread into bite-size pieces and toss with ingredients
Bake at 400° F alongside squash for ten minutes (or until golden brown)
Serve hot with desired toppings!

    So glad I found your channel! By the way, excellent recipe info...hate having to wander off to a link. Vid times helpful too. Haven’t seen many do that. I want to try this soup with Creme Fraich (sp?). Maybe precook the squash to soften enough to slice? My previous post mentioned it’s too hard to slice it.

    Def making that soon! Just for the record... I don’t have a problem with avocado oil! It’s vegetable oil (basically all the seed oils; canola, sunflower, safflower etc) that should be avoided, in my opinion. Olive oil, avocado oil and coconut oil are better choices! Just wanted to clear that up 😉

    I want to let you know you can cut it in half deceit it put cinnamon and nut and mag and sugar and maybe some butter liquid butter it too put it in the oven and cook it with the open side up and bake it and have that as a delicious sweet treat my late mother used to fix it like that for me when I was young and it was delicious

    Yum! Yum! Yum! I can’t cut that squash with a knife d/t shoulder replacement and arthritis. Any suggestions? Croutons look amazing. Sage in the soup 😉 I like that.

    You could roast it whole! Just make sure to poke it 5 or 6 times with a knife first.

    Sorry about the first comment. Wrists and fingers don't work right anymore. Soup looks great. Glad you mentioned about roasting the seeds as a lot of people don't know that. Not sure why the comment was made regarding the language. Maybe my ears don't work right either, but I didn't hear anything offense. In any case, take care, God bless, and stay safe.

    I have a much better and more efficient way of preparing these butternut squash and omit taking chances of getting cut REAL bad. I have yet to see anyone on KZread doing this. It's not rocket science.1st......cut off the stem.Wrap the entire squash, uncut into foil. Throw it in your toaster oven for approx.1.5 hours on 425 degrees. Once cooked, Slice it in half effortlessly. Scoop out the seeds. Then with a tablespoon, scoop out the Squash meat. You get almost 100% of the squash this way AND its sooooooo much easier ! TRY IT !

    I'll try this next time, Thanks for the tip! It may be better for some but I’ll argue you on this strategy being more efficient seeing how your technique takes twice as long in the oven.
