How to Make Thai Steamed Coconut Pudding ขนมถ้วย

Top layer 1/2 cup Rice flour
1/2 cup Sugar
1 tsp Salt
2 cups coconut milk (cream)
Bottom layer
3/4 cup Rice flour
230 grams Palm Sugar
1/4 cup Tapioca Starch
1 tbsp Arrowroot Starch
1 1/4 cup Jasmine Water
1/2 cup coconut milk

    I was looking for a recipe for coconut put chai ko (chinese steamed rice pudding) and i think this will do the job - at least the bottom layer recipe. Love how the thai version has its own spin on things.

    May I ask what brand of palm sugar do you use? The ones that I bought at Asian markets in the states are hard as rocks. The one that you used in this video looked so soft like you find it in Thailand. Any secrets of making them soft?

    You can perhaps substitute with cornflour, potato starch, waterchestnut flour or wheat starch. I say this because those are used in a similar chinese version and different recipes use different starches. I just use rice flour and tapioca starch as i am intolerant to the others. The texture is slightly better if you add in one of the other starches too.

    It's rice flour. Not flower. You can get this at the Asian groceries store. It's just like all-purpose flour that made from wheat. But rice flour made from rice.

    han han no. They are totally different things with different flavour. Jasmine tea comes from dried jasmine flower mixed in green tea leaves that is soaked in hot water, just like any Chinese tea or green tea(some cases, the tea leaves are already infused with jasmine scent so you can’t fish out dried jasmine flower to create jasmine water, even if you can separate them, they’ll probably smell and taste like tea). Jasmine water is created using jasmine flower, similar to rose water.

    the foodie ### they are all available online. You would truly need to be out in the middle of nowhere not to be able to find a can of coconut milk but the ingredients I have not been able to find in my city which are very few are available online. I have checked for other people and everything she uses is available online and sometimes at a cheaper price. Amazon Thrive Market and Asian online stores.
