for those without a candy thermometer, have a cup of cold water near the pot of hot sugar. to check if its the correct temperature for this type of candy, you'll want the sugar mixture to be a golden-amber color, and hardens immediately when you add a small amount of sugar to the cold water. to test it, pull it out of the water and apply pressure with your fingers, if it squishes at all, your mixture is not done

I wouldn't add any colour to it, to make the real flowers look more beautiful with their real colours inside the lollypop :)
